      Seeded Spelt Balls

Once upon a time in Shani’s world of cookies there were only two classifications. Moderately wholesome (rolled oats, nuts, dried fruit or honey tended to be defining features) or thoroughly unhealthy. The ‘healthy’ end of the spectrum didn’t exist.  In that world a cookie couldn’t be healthy. It was impossible. Indulgent just didn’t equate with nutritious. What a narrow world it was. Then one day it wasn’t anymore. Turns out it is in fact possible for a cookie to be good for you. Relatively speaking. We can’t be comparing cookies with watermelon – it just wouldn’t be fair for either party. Continue reading →

I haven’t had much time to cook, nor felt like it (what is the world coming to?!) over the past few days. Apart from the one exception (sublime homemade spinach and ricotta gnocchi in a pine nut and browned butter sauce – I’ll make it again just for you soon, promise!) meals have largely consisted of basic salads or poached eggs on veg. Despite the general abnormal behaviour in regards to cooking, I haven’t been able to resist a little baking. My repertoire was far simpler than it is today so it only felt ‘proper’ to revisit one of the old favourites. These Dark Chocolate Orange Coconut Cookies used to be my ‘sophisticated’ biscuits. I felt very grown up using the complex ‘adult’ flavours. Boy have things moved along a fraction mile since then. Continue reading →

I think by now we’ve established that indulgence is perfectly fine, even necessary, as long as it adheres to the golden rule of moderation. How boring would life be without chocolate, or cookies or sweets or, gasp, peanut butter? I don’t even want to think about it. However, there’s no denying that finding a balance can be difficult. I don’t know about you but there’s been many a time when I’ve wandered into the kitchen for one cookie/square of chocolate/spoonful of peanut butter (please tell me I’m not alone on this one folks) and  overstayed my welcome. A while later I emerge cursing that I even I entered the kitchen, and vowing that next time I’ll have a stronger resolve. The whole “I’ll just have a little more”…”and a little more” ends up being an “oh heck, I’m here I’m might as well go the full hog”. So what if I told you there was a solution? And, even better, one that involves chocolate and cookies and sweets and, wait for it, peanut butter? Now we’re talking. Continue reading →
