      All good things take time. That’s a given. And it most certainly applies to the case of the humble pizza. Sure, you can whip up a reasonable pizza within an hour, but if you want to go the whole hog (which, honestly, why wouldn’t you) it’s going to take a little more elbow grease. The winning combination involves a homemade sauce, a homemade base and lovingly prepared vegetables. Singing a crooning tune to the pizza while it is in the oven doesn’t hurt either. If you’re going to commit, commit 100%. You’ll be rewarded with a brightly coloured, gloriously flavorsome, sublimely textured specimen. Oozing, melty blobs (what a word, blob) of bocconcini adorn the sweet pumpkin pieces. Dollops of salty, creamy ricotta contrast with the richness and ‘pop’ of tomato sauce. Teensy leaves of basil make the pizza look oh-so-pretty and provide a hint of freshness. This pizza = a marvellous trip to heaven. It’s a given. Continue reading →

      These Chilli Bean Rolls are hands down a firm family favourite. Credit must go to the little sister for coming across the recipe when she was a wee lass, and begging for it to be made. Anything that involved pastry, the word ‘chilli’ and cheese put the cheeky tacker in food-heaven.  Despite being able to devour a mind boggling number of these in the one sitting, she remained as thin as a rake: one of those super slender kids who was adorable but also scared the beejesus out of you when you rugby tackled them: a) because you thought you might accidently break them and b) because they actually fought back with a strength you had no idea they had. I seem to recall (although my memory is so foggy at present that it’s like being in the forbidden forest, unable to see your feet in front of you) that the deal was if she wanted them that bad for dinner, she could make them.       Now folks, here’s my top tip going into 2016. Don’t go buy yourself a new laptop. No matter how old your current one is, cling on to it for dear life. Give it CPR if you must. Why? Because it will prove to be two of the most painful days of your recent existence. More painful than the half marathon. And far less rewarding. Well, if you’re moi anyway. Perhaps you’ve got a little leprechaun dancing around showering you with luck. Perhaps banks and Macbook Pros actually like you. And don’t find pleasure in trying to a) humiliate, b) inconvenience/time waste or c) completely and utterly zap any sort of hope from you. Right at this moment it’s 10.18pm (yay for typing out posts that you actually handwrote!) and I’m curled up in bed feeling like, well, poo. Sorry, there’s no other way to put it. Continue reading →

      Porotos Granados. Is it a soup? Is it a stew? No-one will ever know. This version of the Spanish dish is confused but happy. Like me a lot of the time. I guess you could call it a chunky soup. Not that it particularly matters. Why do we always feel as though we have to define everything? What if you don’t want to be the ‘girl next door’ or the ‘crazy bitch’ or the ‘cute geek’? This dish could be feeling the exact same thing. It doesn’t want to be pinned down by labels, nuh-uh! It’s its own individual self. Quirks and all. It’s sweet from the butternut squash and corn, slightly spicy from the smoked paprika, creamy from the sweet potato and borlotti beans and just damn delectable with the addition of oregano and caraway seeds. And Asparagus is in season, big yay! Sure, you’re always going to face the conundrum of whether to eat it with a spoon or a fork, but if that’s the biggest issue you face for the day I think you can handle it. Why, try both!
