      These Chilli Bean Rolls are hands down a firm family favourite. Credit must go to the little sister for coming across the recipe when she was a wee lass, and begging for it to be made. Anything that involved pastry, the word ‘chilli’ and cheese put the cheeky tacker in food-heaven.  Despite being able to devour a mind boggling number of these in the one sitting, she remained as thin as a rake: one of those super slender kids who was adorable but also scared the beejesus out of you when you rugby tackled them: a) because you thought you might accidently break them and b) because they actually fought back with a strength you had no idea they had. I seem to recall (although my memory is so foggy at present that it’s like being in the forbidden forest, unable to see your feet in front of you) that the deal was if she wanted them that bad for dinner, she could make them.       I sat down to study. Opened the lap-top. Read the first line of that journal article on Indigenous women and feminism. And the brain’s energy circuits shorted. Cue staring at the screen for a solid five minutes. Not taking a single thing in. Right. If study is out the window then surely blogging is in? Nada. This gal’s brain is currently sending out signals along the lines of bleuaighleighmmmmnop. And intermittently at that. It’s struggle town. Tonight’s post is going to be short and sweet, me thinks. This situation calls for a recipe that is beyond simple. Virtually impossible to make a boo-boo out of. Tasty, regardless of how terribly you maul it in your zombie-brain state.       If cooking could be a person, it’d be your best mate. Not a partner – that’d just be too creepy. But a real keeper all the same. It’s there for you through thick and thin. To witness the good, the bad, the plain weird, and everything in between. The crazy dancing around the kitchen to Bruce Springsteen’s ‘Dancing in the Dark’ moments. The bleary eyed pajama-clad pancake sessions (where you don’t even attempt to flip the pancake as your coordination most definitely hasn’t woken up yet). The oven-died-just-as-the-cheesecake-needed-to-go-in tantrums (foot stomping included). The heartbroken pizza-dough kneading, tears silently running down one’s face. The fist pumping when your Charlotte Russe turns out of the mould. Perfectly. The trying to juggle too many things at once moments, such as making lasagne while clad in bright green running shorts and a hot pink sports bra, with a floral apron thrown over the top (so you can exercise while it’s cooking, of course!). Let’s just say that opening the door to receive a parcel resulted in one very confused mailman. Let’s not talk about that. Like it or not, cooking’s seen the very best and worst of you.       Some things in life we can guarantee. Amidst all that uncertainty, those big questions in life – is it going to be warm or cold today? (in Melbourne you can never be sure) do those jeans actually look good on me? (might as well admit we’re all a little superficial at times) do I want cereal or toast for breakfast? (such a dilemma) – there is one thing you can be sure of. With 100% certainty. What’s that, you ask? Why, that you won’t miss the lamb mince one bit in this Vegetarian Moussaka. Even if you’re a dead set carnivore. Kidney beans cover your back in the protein department and meld effortlessly with the rich tomato sauce. Cinnamon works it’s thang, transforming a typical tomato sauce into something inherently Greek…a spice not just reserved for the sweeter side of cooking! Soft slices of potato and sautéed eggplant sandwich everything together, with a creamy cheese sauce seeping through the gaps. A decent scattering of cheese – yes more cheese – produce a decadent melty, golden brown topping, that bit you save for last (or eat first if you’re one of those people). You draw the dish from the oven, hot and bubbling, it’s rich aroma permeates through the air…. Continue reading →

    • Vegetarian Taquitos

      I’m kind of surprised that these taquitos didn’t end up a complete dog’s breakfast. You see, yesterday my brain took a holiday from cooking mode. A rare occasion, I’m telling you. Gawd, most of my dreams are about food and nightmares involve someone stealing my baking equipment. Lame, I know. So weirdness aside, without my permission my brain decided to take leave of all basic cooking instincts. First, I spattered chunks of frozen berry all over myself when making a smoothie for breakfast. Who knew that you needed liquid to puree hard ingredients in a hand blender? Well I actually did know that. Unfortunately my wits were on sabbatical. I guess it did serve as good but messy reminder. Secondly, I almost killed off the yeast in my Chelsea Buns. Someone thought it would be a good idea to reduce electricity usage and prove the dough in the sun, rather than in a very low oven. That someone then became so absorbed in her university research that she failed to see that the sun had moved and the dough was sitting in the shade. Thirty minutes later that same someone emerged from the computer screen to discover that the dough had not risen and was quite, quite cold. Cue cursing. Luckily the yeast valiantly decided to hold in there and the dough proved fine once I reverted back to the more ‘conventional’ method. The buns were slightly heavier than usual but still super tasty, which was a relief. After that episode I was rather apprehensive about cooking dinner – who knew what stupid thing I would do next?
