    • Pumpkin, Zucchini, Sundried Tomato, Spinach, Ricotta & Bocconcini Pizza

Pumpkin, Zucchini, Sundried Tomato, Spinach, Ricotta & Bocconcini Pizza

All good things take time. That’s a given. And it most certainly applies to the case of the humble pizza. Sure, you can whip up a reasonable pizza within an hour, but if you want to go the whole hog (which, honestly, why wouldn’t you) it’s going to take a little more elbow grease. The winning combination involves a homemade sauce, a homemade base and lovingly prepared vegetables. Singing a crooning tune to the pizza while it is in the oven doesn’t hurt either. If you’re going to commit, commit 100%. You’ll be rewarded with a brightly coloured, gloriously flavorsome, sublimely textured specimen. Oozing, melty blobs (what a word, blob) of bocconcini adorn the sweet pumpkin pieces. Dollops of salty, creamy ricotta contrast with the richness and ‘pop’ of tomato sauce. Teensy leaves of basil make the pizza look oh-so-pretty and provide a hint of freshness. This pizza = a marvellous trip to heaven. It’s a given. Continue reading →

Today my friend I’m going to share with you the fondness I have for a very special food group (yes it’s special enough to have it’s very own group of homies). That of the humble soup. The poor soup is so often underrated. Rudely relegated to the position of ‘starter’ or ‘diet food’. It may pass the test for acceptable lunch options, yet rarely makes it to the prime position of the day – the main meal (although I firmly believe that breakfast is the king of meals, yet that discussion is for another day otherwise we’ll be here for houuuuurrrrrs). I’m calling for a revolt. Are you with me? To put the wonder that is soup in its deserved place. Where it is appreciated for its diversity, its relative nutritional properties and its applicability to every season. Soup is not solely a winter meal. Why, ’tis a bowl of goodness to be savored year-round. Continue reading →

I’ve been distinctly depressed this week. Perhaps that’s a misuse of the term. Not in a serious-mental-health-sense, but more so the downhearted, disconsolate kind. What triggered this bout of dejectedness? I ashamed to say. Twas the film Insurgent. Alrighty, don’t judge too harshly! More specifically (and in a similar line to the Hunger Games etc. – i.e. those kinds of movies) it was the female protagonist in particular who prompted this downhearted spell. Why? They’re so goddam baddass it hurts. Never fail, every time I watch these kinds of films I want to a) be them or b) become a stunt artist. Neither of which is going to happen. Reality check. It’s not the killing, heart/gut wrenching situations, the perpetual fear/anxiety or even the complicated-yet-passionate blooming romance I’m after, nuh-uh. It’s that sense of being strong, of giving it absolutely everything and then some more, of wholly devoting yourself to a cause/situation. Of being fearless – “take my hand, drag me headfirst, fearless” (obligatory T-Swizzle reference there; it appears we’re letting loose with all the dorky confessions today!). Continue reading →

Sorry for the salad spam. Well not really. It’s summer. In Australia. It gets hot. Hot = salad cravings. Big time. However this particular specimen, this Spinach, Pumpkin, Pine Nut, Cannellini Bean Salad with Caramelised Red Onions (whew, that’s a long name!) is suited to all seasons. It can wear the hat (or beanie) of comforting, warm salad just as easily as that of the cool, refreshing one. Think sweet, pungent caramelised onions, chunks of roasted butternut squash (hot or cold), creamy cannellini beans and crisp baby spinach leaves. Toasted pine nuts provide crunch and, well, nuttiness. Whe-hey. Whip this up and you’ve got yourself a fancy schmancy lunch or simple dinner. Pop it in a flatbread/wrap for a snazzy sarnie or serve alongside some quinoa for an extra protein boost. Versatility is our friend. Continue reading →

Not to be fatalistic and all that but sometimes you wake up and just know it’s going to be an uphill battle all day. On the plus side, if you’re so damn confident that it will be you can try your darndest to moderate it. Hey, we’re not saying you can become Pollyanna, but it is possible avoid being a completely miserable/grumpy human being. Truly. And if all else turns to poop at least you know you tried. As you’re parents are apt to tell you time and time again, you always get brownie points for that. Hmmmm speaking of brownies…ever wondered why you crave sugar-saturated or fatty foods on those ‘let’s-hate-on-life’ days? Well, there’s science behind it. Sugar and fat stimulates the production of endorphins, i.e. the ‘feel good hormone’, making you feel, well, happy. That’s a good excuse as ever to bake a cake, right? I mean, science is pretty much commanding you to. Continue reading →
