      Somehow this post has been lost in the abyss that is my blogging folder. Written over a year ago, it’s nigh on time to share it with you. And fitting too – we’re off down the coast for a few days, staying at a friend’s holiday shack.  We undertook a similar venture this time last year and among the many items we baked to take with us, this Apple and Date Cake was one of them (only thing was it didn’t last long because we were all too greedy). Although it won’t be accompanying us on this particular trip who knows, we may make it down there – the ingredients will most certainly be packed for if the right time arises! Continue reading →

      Gee it’s been a while. Scratch that. A fair bit more than a while. The past few months have seen me picked up by a cyclone, whirled about, flipped into the eye for a brief moment of calm, and then thrown headfirst back into the whirlpool of uni/college/work/travel/life-in-general. I’m close to being spat out for good. Whumped down on the ground, hair mussed up (I really should get it cut – been meaning to for weeks now – not that you want to know), rather exhausted but otherwise unscathed (here’s hoping). You’ll be hearing far more from this scatter-brain after that. Give it six weeks or so. And I’ve missed you. No, seriously. I don’t do soppy but amidst the crazy happenings of the past few months, there’s been an ouchie in my chest that continues to expand ever so slightly as time goes on. A void that craves connection with the culinary world – to invent, to cook, to write, to discuss, heck to even be haunted by it in your dreams. And no that doesn’t mean being chased by a giant saucepan – there are those of you out there who’ll know what I mean. I’ve maybe even missed photographing. Now that means something. I’m telling you.       I think it would be accurate to say that I can be a twit at times. It appears that not even attending the University of Oxford prevents one suffering from the affliction of ‘donkey brain’.  The baking of this Chocolate Beetroot Bundt Cake witnessed one such pea-brain episode. The sad thing is, it’s not even a hard cake to make. Practically an all-in-one. The hardest thing is preparing the bundt tin. Knowing that you’re meant to stir the chocolate chips in before the cake goes into the oven is kind of expected. Remembering that after the cake has been in the oven for five minutes is not part of the recipe. Uttering a series of expletives, pulling the cake frantically back out of the oven (my pastry teachers would have a heart attack if they witnessed that) and pushing the chocolate chips into the top of the partially risen, hot, soft batter certainly isn’t. Fortunately, this episode of Shani-is-a-bimbo wasn’t terminal. I’m pleased to announce that the cake turned out a-okay. You can’t say this Chocolate Beetroot Bundt Cake hasn’t been adequately tested for fool-proof-ness – it was tested by the fool herself. Continue reading →

      Not to be fatalistic and all that but sometimes you wake up and just know it’s going to be an uphill battle all day. On the plus side, if you’re so damn confident that it will be you can try your darndest to moderate it. Hey, we’re not saying you can become Pollyanna, but it is possible avoid being a completely miserable/grumpy human being. Truly. And if all else turns to poop at least you know you tried. As you’re parents are apt to tell you time and time again, you always get brownie points for that. Hmmmm speaking of brownies…ever wondered why you crave sugar-saturated or fatty foods on those ‘let’s-hate-on-life’ days? Well, there’s science behind it. Sugar and fat stimulates the production of endorphins, i.e. the ‘feel good hormone’, making you feel, well, happy. That’s a good excuse as ever to bake a cake, right?       Uni classes have officially finished for the semester, with this week dedicated to study prior to exams commencing. It’s a little over half way through day one of revision, revision and yet more revision and I’m already dreaming of all the baking I could be doing in another life. The kind of baking that requires little thinking. Minimal brain power. The kind that involves face-planting into said baked good and giving zilch consideration to other matters going on in the world. Baking is satisfying and straightforward. It’s productive. You’re guaranteed to get a pretty darn good end result (should we tack on a ‘most of the time here’?). You can see (and sneakily taste) the progress. Quite unlike some other aspects of life…I wonder what they could be? Revision-time requires the simple things in life. For when your brain resembles scrambled eggs, a muddle of words and numbers. It requires homely things. And yup you guessed it, this is a homely cake. It’s neither fancy nor fussy to prepare.
