      Very rarely are things as bad as you predict them to be. For the past week a certain someone has been freaking out big time about starting a new job. A job that will only run for three weeks. A meager 21 days. To the point at which she’s had enough kittens to fill a cattery several times over. Fluctuating between being snappy at everyone/thing, mega-hyper and sitting listlessly on the couch morosely contemplating her ‘bad decision’, this certain someone hasn’t exactly been bundles of fun. However, as most first-days tend to prove, over-thinking is never helpful – it often leads to negativity and catastrophising. You see, the job really wasn’t all that bad. Yes it was a 10 hour shift, yes the only time one sat down was to go to the bathroom twice (over-sharing? Ah well), yes one has a blister forming from cutting so many vegetables/chicken/herbs etc. And yes one has a nasty burn on her forearm (the customary welcome-back-to-the-commercial-kitchen present), but all-in-all the shift was fine.       With the summer break stretching out ahead, there’s been plenty of time spent sitting at home looking at recipes. Poring over the numerous cookbooks that our share house has accumulated, collecting more cookbooks from the local library, stalking food blogs…it’s an addiction. An unhealthy one? I’ll leave that up to you. Rather than doing the more important things in life, such as washing that dress with the spilled Moscato on it from back in October (dear god, was it really October?! What a grot) a certain someone has spent a lot of time looking at recipes. It’s easy to become lethargic, to simply sit there and consider all the things one could be cooking. The other variance is to actually get off one’s butt and cook ‘all the things’, yet remain steadfastly disinclined to blog about them. Things are going to change. Honestly. Continue reading →

      Uni classes have officially finished for the semester, with this week dedicated to study prior to exams commencing. It’s a little over half way through day one of revision, revision and yet more revision and I’m already dreaming of all the baking I could be doing in another life. The kind of baking that requires little thinking. Minimal brain power. The kind that involves face-planting into said baked good and giving zilch consideration to other matters going on in the world. Baking is satisfying and straightforward. It’s productive. You’re guaranteed to get a pretty darn good end result (should we tack on a ‘most of the time here’?). You can see (and sneakily taste) the progress. Quite unlike some other aspects of life…I wonder what they could be? Revision-time requires the simple things in life. For when your brain resembles scrambled eggs, a muddle of words and numbers. It requires homely things. And yup you guessed it, this is a homely cake. It’s neither fancy nor fussy to prepare.       I gain an immense amount of satisfaction from creating healthier versions of much loved recipes.  A nutritional makeover. At times I fret over how just happy I become when the transformation is successful. Too happy. Regardless, you can’t deny that being able to eat favourite ‘unhealthy’ dishes more often (because, they’ve been, well, ‘healthified’) is cause for some celebration. The major downside of some ‘healthed-up’ versions is that they are often inaccessible or unappealing to many home cooks, either due to obscure ingredients or lengthy preparation practices. However, you need not be wary of this particular recipe – it’s not overtly brazen at all. Sweet, juicy roasted tomatoes, creamy pesto and whole-wheat pasta..why it’s virtually a simple weeknight meal! Continue reading →

      Consider yourself lucky that I haven’t yet alerted you to my severe obsession with peanut butter. The time will come and when it does, brace yourself or tune out. A year ago, with the advice of a naturopath in mind, I started to cut back on the stuff. Going cold turkey was simply too daunting yet soon enough I became transfixed with other, healthier nut butters. And oh boy, there’s a whole world of them out there.  Rich, creamy and dreamily nutty. An obvious statement, but I felt it was necessary. Sorry. It’s heaven on a stick. Or more specifically, on toast or crispbread or sliced apple or banana or swirled through natural yoghurt or straight out of the jar…we could be here for a while. Freshly made nut butter? That takes things to a whole new level. And guess what? Today’s your lucky day. We’re going to be doing just that. One glorious jar of almond butter coming up. Continue reading →
