      Very rarely are things as bad as you predict them to be. For the past week a certain someone has been freaking out big time about starting a new job. A job that will only run for three weeks. A meager 21 days. To the point at which she’s had enough kittens to fill a cattery several times over. Fluctuating between being snappy at everyone/thing, mega-hyper and sitting listlessly on the couch morosely contemplating her ‘bad decision’, this certain someone hasn’t exactly been bundles of fun. However, as most first-days tend to prove, over-thinking is never helpful – it often leads to negativity and catastrophising. You see, the job really wasn’t all that bad. Yes it was a 10 hour shift, yes the only time one sat down was to go to the bathroom twice (over-sharing? Ah well), yes one has a blister forming from cutting so many vegetables/chicken/herbs etc. And yes one has a nasty burn on her forearm (the customary welcome-back-to-the-commercial-kitchen present), but all-in-all the shift was fine.       It’s time to stack. To layer, with a lazy supper/lunch/breakfast that’s low on fuss and big on impact. It might look a little piddly in the image – sorry about that – but that’s just because I couldn’t find any nice big Portobello mushrooms and had to settle for smallish field mushrooms instead. We’ll manage. It proves that looks aren’t everything. Salty, squeaky haloumi meets juicy grilled mushroom in this ‘open’ sarnie. There’s zesty pesto for added flair and creamy avocado because, well, avocado makes anything taste better. It’s a fact. And because we’re feeling a tad luxurious (it is the holiday season after all) we’re going to cut the crusts off the bread. Oh my. Continue reading →

      Grilled cheese sandwiches. The ultimate comfort food/cold weather food/can’t be bothered making a ‘proper dinner’ food. Let’s be honest. It’s anytime food. Not just for kids – we ‘grown-ups’ can eat them too. It’s perfectly acceptable grub – even for dinner – especially when jazzed up with nutritious extras. In this particular specimen you’ve got cannellini beans for fibre and protein, avocado for healthy fats as well as a kazillion other wellness-boosting nutrients and beetroot to cover your veg bases. Wait a minute, avocado counts as a veg too! Let’s just forget about the slab of cheese wedged in the middle, and the fact that the bread is lathered in butter. Because, hey a little fat never hurt no-one (given that it’s not the major component of the meal). There’s simply no point trying to omit them – you wouldn’t have a grilled cheese sandwich anymore would you? Continue reading →

      We’ve recently been inundated with bread (more on that in Wednesday’s waste post) and as a result it’s been an imperative that I devise meals incorporating it in ways other than a conventional ol sarnie. Don’t get me wrong, there’s nothing at fault with a good sandwich, but there are only so many days in a row you can have one for dinner without going a little insane. Last night’s venture involved transforming a few innocent slices of bread into herby, garlicky, crispy croutons. Paired with creamy avocado, cubes of smoked cheese, peppery rocket, sweet, luscious tomatoes, chunks of roasted pumpkin and crunchy pepitas, they evolved into a salad highly suited to a scorching hot evening. I’m all about balancing healthiness (the whole salad thing covers that base pretty well) with indulgence, and the balsamic-maple dressing gave this salad the finishing touch – sweet, tangy and rich, yet not in-your-face over the top.     • Cannellini Bean Salad

      Lunches at cooking school are a fickle event. You never know when they will be, or if you will be granted a break at all. One day it may be at 10.30am and the next at 2pm. Some days you may be ravenous by 9am, particularly if there’s a class baking bread next door. The smells wafting through are pure torture, I’m telling you. Other days you may be put off food so much that you never want to eat again, have no appetite whatsoever, despite having eaten nothing since 6.30am. You get the picture. Lunches are up, down and all over the place.  What is predictable, however, is that I will always enjoy eating this cannellini bean salad, regardless of the time of day or my state of hunger. It took me a while to realise that salads can actually be, well, exciting. Crazy, I know. I was a pretty good kid and always ate my veg without much cajoling. However, it was always eaten first – quite unceremoniously – and before all of the ‘yummier’ bits. But its not surprising really as iceberg lettuce, chunks of cucumber, wedges of tomato and carrot sticks aren’t all that interesting – to look at or to eat. In my 10 year old brain that’s all a salad was, and all it ever would be. Continue reading →
