      Sweet Potato & Zucchini Muffins

The theme of today’s post is being in a rush. That frantic action-stations kind of rush where you either slip into complete zen mode and float through the situation to your destination/goal, or where you run around like a headless chook/fall over your own feet/sit on the floor paralysed by how you’re not going to make it. There’s also that rather unique kind, one that results in you taking rather shoddy photographs (see exhibits a, b, c and d on this post) because you’re far too eager to consume the food being photographed. Which is ironic really, as it means the photos do very little justice to the specimen that is in fact knee-tremblingly tasty. You’ll just have to take my word for it: these muffins are to.die.for. And you won’t even die from them – each muffin contains just ¼ tsp olive oil and ¼ tsp sugar! Continue reading →

Would you believe it’s been a gloriously sunny today? That’s right, actual sunshine. Not warm, but sun all the same. Blue skies. A light breeze (though, wearing a flippy skirt was not a wise move)…all that jazz. Considering it’s first day back at university, it’s nice to have some brightness in the world. Lectures…what were those again? In all honesty it’s good to slide back into days that have some form of structure. Days, that no longer meld effortlessly into the next, into one big blob of ‘what did I even do/accomplish in that time?’. Deadlines aren’t all that bad. Truly. To celebrate the impromptu burst of spring weather – there are even, shockingly, yellow daffodils blooming in the grounds – we’ve got a light refreshing meal on the cards. ‘Vegetable and Tofu Bowl’ may sound less than appetising, but trust me on this one. Go on, I dare you. Continue reading →

Apparently it is possible to have too much of a good thing. I’ve had plenty of opportunities to blog over the last fortnight, yet have not felt the inclination to do so. On arriving back at my mother’s home I made a beeline for the kitchen and immediately donned my apron. Unpacking could wait. An immense about of cooking ensued over the following days, with three dishes on the first evening alone. After twelve weeks of virtually being starved of all forms of cooking it was bliss to be back in the kitchen. However, spending nigh on a week relentlessly stirring, chopping, whipping, icing, baking, boiling and photographing takes it’s toll. In an I-don’t-want-to-even-think-about-food kind of way. Now that my friends is a rare occasion. Continue reading →

There are a number of culinary combinations that we take for granted. That just are. Raspberry and white chocolate, apple and cinnamon, pumpkin and pecan, orange and poppy seed…to question them would be heresy. I don’t plan to. But there’s a catch associated with accepting such combinations as ‘culinary rules’. We can be inclined to forget about or try others. Others that work nearly as well, or even better, yet are not exactly by the book. But why bother when you can go with a tried and tested combination? The case in hand for today is orange and poppy seed. Why, it’s a fantastic combination, particularly in baked goods such as these orange poppy seed muffins. However, it does mean that when I consider orange and seed/nut combinations, that is the only one that crosses my mind. It’s automatic. It was well and truly time to break down that block. Venture out into the unknown. Continue reading →

There is something immensely satisfying about a tarte tatin. Well, if it’s actually successful. It might be due to the fact that as the story goes, it was an unintentional discovery, born from a mistake by the Tatin sisters in Lamotte-Beurvron, France. The knowledge that brilliant things can spawn from seemingly disastrous culinary errors helps keep morale up when things don’t quite turn out as planned. You never know – that mishap from the other night could become next tarte tatin! Or perhaps the satisfaction’s due more so to the process of constructing the tart upside down and the suspense of turning it out. Will it work or will it fall apart in a sticky mess? You stick your tongue out in concentration, brace your legs, count to ten and send a quick prayer to the cooking god. Preparation – and a little sucking up to higher powers – is key. Oh, you don’t do that? I swear it helps. Continue reading →
