      All good things take time. That’s a given. And it most certainly applies to the case of the humble pizza. Sure, you can whip up a reasonable pizza within an hour, but if you want to go the whole hog (which, honestly, why wouldn’t you) it’s going to take a little more elbow grease. The winning combination involves a homemade sauce, a homemade base and lovingly prepared vegetables. Singing a crooning tune to the pizza while it is in the oven doesn’t hurt either. If you’re going to commit, commit 100%. You’ll be rewarded with a brightly coloured, gloriously flavorsome, sublimely textured specimen. Oozing, melty blobs (what a word, blob) of bocconcini adorn the sweet pumpkin pieces. Dollops of salty, creamy ricotta contrast with the richness and ‘pop’ of tomato sauce. Teensy leaves of basil make the pizza look oh-so-pretty and provide a hint of freshness. This pizza = a marvellous trip to heaven. It’s a given. Continue reading →

      The theme of today’s post is being in a rush. That frantic action-stations kind of rush where you either slip into complete zen mode and float through the situation to your destination/goal, or where you run around like a headless chook/fall over your own feet/sit on the floor paralysed by how you’re not going to make it. There’s also that rather unique kind, one that results in you taking rather shoddy photographs (see exhibits a, b, c and d on this post) because you’re far too eager to consume the food being photographed. Which is ironic really, as it means the photos do very little justice to the specimen that is in fact knee-tremblingly tasty. You’ll just have to take my word for it: these muffins are to.die.for. And you won’t even die from them – each muffin contains just ¼ tsp olive oil and ¼ tsp sugar! Continue reading →

      Before the summer is out be sure to make the most of the bounty of vegetables available, and in particular zucchini. Zucchinis/courgettes/whatever you like to call them, are a brilliant vegetable. Baked, fried, souped, grated into muffins or cake, there’s endless opportunities. This recipe was inspired by the Green Kitchen Stories cookbook, a must buy for any vegetarian or ethically/health conscious eater. A lighter version of your traditional parmigiana, it’s an ideal meal for a warm weekend evening. Why the weekend? Well, there’s quite a process involved, but if you complete the tasks in stages it really feels like no hassle at all. The perfect recipe for those who like to potter about, doing a little here, a little there. You’ll be duly rewarded for your efforts, with a stunning dish – layers of sweet, fragrant tomato sauce, thin strips of zucchini, boiled egg, creamy mozzarella, punchy parmesan, fresh basil and mint leaves.       How was your Easter? Overload on chocolate? Lose all sense of self restraint and eat far too many Hot Cross Buns? Have you yet reached the point at which you blanch at the thought of anything remotely egg/bunny shaped? I know I certainly have. When you do, it’s good to hit the refresh button. Do what you need to do to get back on track. Freeze any left-over (yeah, fat chance, I know) hot cross buns, pass the remaining chocolate on to someone else so that they can hide it from you and make a darn good salad to revitalize those taste buds… Continue reading →

      Listen up and listen well my friends: this Mushroom and Zucchini Strata must chill overnight. Or at for at least five hours. Why? I’ll get to that later. I simply felt obliged to point this fact out to you now, rather than just before you cheerily go to put it in the oven. Discovering that what you had prepared for tonight’s dinner is now destined for tomorrow night will wipe that happy “I’m all prepared” smile right off your face. Been there, done that. And that is why I’m covering my back by giving you fair warning straight from the start. Two words: plan ahead. Hang on a sec, I can see you’re about to skip to another recipe. I understand – I do that too. Please stay. Planning ahead isn’t a drag (well at least not all the time), it’s actually very useful. Planning prevents situations where you’re frantically searching the net for a quick, tasty recipe to cook. Right. Now.  It’s much nicer to still spend more time than you really should looking for recipes (because if you’re anything like me it’s an addiction), but with no sense of immediacy. And all the chill-time induced waiting will only whet your appetite for this strata even more. It’s lip-smacking good. Shall I explain why you have to wait so darned long for it? Sounds like a plan.
