      We’ve had a mini heatwave here in Melbourne these last few days. A tantalising taste of the summer yet to come. And it’s been a long time coming. After weeks of cold, relatively damp, and at times incredibly windy, weather we’re more than ready to emerge from those thick woollen coats, eye’s blinking in the foreign sunlight. Ehhh it’s not that bad. But yay for summer! Spring puts a well, spring, in your step. There’s new hope. Tasks that before seemed momentous now appear achievable. Fatigue is somewhat more manageable. Sleep deprivation not quite so bad. I think we all agree that it’s easier to get up early when the sun is shining through your window! The summer break is just around the corner – forging your way through the wall of study/work/other tasks becomes that little bit easier. And even more so when you’ve got a refreshing plate of salad to dig into! Continue reading →

      Sorry for the salad spam. Well not really. It’s summer. In Australia. It gets hot. Hot = salad cravings. Big time. However this particular specimen, this Spinach, Pumpkin, Pine Nut, Cannellini Bean Salad with Caramelised Red Onions (whew, that’s a long name!) is suited to all seasons. It can wear the hat (or beanie) of comforting, warm salad just as easily as that of the cool, refreshing one. Think sweet, pungent caramelised onions, chunks of roasted butternut squash (hot or cold), creamy cannellini beans and crisp baby spinach leaves. Toasted pine nuts provide crunch and, well, nuttiness. Whe-hey. Whip this up and you’ve got yourself a fancy schmancy lunch or simple dinner. Pop it in a flatbread/wrap for a snazzy sarnie or serve alongside some quinoa for an extra protein boost. Versatility is our friend. Continue reading →

      How was your Easter? Overload on chocolate? Lose all sense of self restraint and eat far too many Hot Cross Buns? Have you yet reached the point at which you blanch at the thought of anything remotely egg/bunny shaped? I know I certainly have. When you do, it’s good to hit the refresh button. Do what you need to do to get back on track. Freeze any left-over (yeah, fat chance, I know) hot cross buns, pass the remaining chocolate on to someone else so that they can hide it from you and make a darn good salad to revitalize those taste buds… Continue reading →

      There are a number of culinary combinations that we take for granted. That just are. Raspberry and white chocolate, apple and cinnamon, pumpkin and pecan, orange and poppy seed…to question them would be heresy. I don’t plan to. But there’s a catch associated with accepting such combinations as ‘culinary rules’. We can be inclined to forget about or try others. Others that work nearly as well, or even better, yet are not exactly by the book. But why bother when you can go with a tried and tested combination? The case in hand for today is orange and poppy seed. Why, it’s a fantastic combination, particularly in baked goods such as these orange poppy seed muffins. However, it does mean that when I consider orange and seed/nut combinations, that is the only one that crosses my mind. It’s automatic. It was well and truly time to break down that block.       Does purchasing spring onions not seem like an awful waste? I mean they do work exceptionally well in salads, quiches, as pizza toppings and, well, anything that you’re feeling too lazy to chop up an ordinary onion for. However, that’s just the white ‘rooty’ part, and not the whole spring onion. So what on earth do you do with the rest – i.e. the majority – of the onion? In my house the dark green fronds often face a grisly execution on arriving home from the supermarket.  They take up so much blasted room in the fridge, weep gunk all over the place and generally disintegrate into a state of oozy floppiness that we usually resort to giving the bunch of spring onions a good ol’ haircut with the kitchen scissors before relocating them to their new home. Fortunately this Fried Tofu Salad with Chilli Peanut Sauces changes things. Because, wait for it….it only uses the dark green part of the spring onion. I’d like to say it was a stroke of genius on my part but it aint. Truth be told I’d already selected the recipe before cottoning on to its clever inclusion of the poor abandoned green parts.
