      How’s your Monday going? Did you groggily rise from bed, inhale a mug of coffee and waddle out the house bouncing off the door frame? Or did you spring from sleep, fully refreshed and ready to face the week ahead?       Food at college is pretty decent. Most of the time it’s relatively healthy, or at least a healthier option is provided. Of course one can choose to not eat their vegetables, to avoid the fruit bowl and to have second helpings of dessert every night. But one need not – it’s good practice in self restraint. Diligence. As with all college’s there’s been the occasional ‘huh’ meal, such as chicken meatloaf aka. chicken mince baked into a pale, lifeless slab. Mmm yummy. Unless you start to go all ‘foodie’ and ‘snobby’, most takes on the classics are perfectly fine. Despite striving to adopt a ‘food is food’ mindset, from time to time one cannot help weep over how easy it is for a dish to fail dismally, simply due to particular techniques or ingredients. On one such night we were presented with the option of sweet and sour pork or sweet and sour tofu. Now, the meal was adequate, in no way inedible. Yet it was blow-your-socks-off sweet and lacked any satisfying crunch from vegetables. This was one such time when the food snobbery rears it’s head and you can’t help but compare it to your own ‘better’ recipe. Continue reading →

      Would you believe it’s been a gloriously sunny today? That’s right, actual sunshine. Not warm, but sun all the same. Blue skies. A light breeze (though, wearing a flippy skirt was not a wise move)…all that jazz. Considering it’s first day back at university, it’s nice to have some brightness in the world. Lectures…what were those again? In all honesty it’s good to slide back into days that have some form of structure. Days, that no longer meld effortlessly into the next, into one big blob of ‘what did I even do/accomplish in that time?’. Deadlines aren’t all that bad. Truly. To celebrate the impromptu burst of spring weather – there are even, shockingly, yellow daffodils blooming in the grounds – we’ve got a light refreshing meal on the cards. ‘Vegetable and Tofu Bowl’ may sound less than appetising, but trust me on this one.       Get Your Greens Egg Fried Rice with Tofu

      How do you treat your stir-fry? In our household it’s been relegated to the ‘rubbish bin position’. That sounds quite unfortunate, however it’s actually an honorable position. The humble stir fry is the go to meal for when there’s an array of lonely old vegetables sitting in the fridge. It’s often a rush-job affair – throw in the vegetables in question (almost anything will suffice), along with a big dollop of ginger and garlic, blast it all with some serious wok heat, scrounge up a packet of noodles or rice and douse the whole lot in whatever sauces you’ve got on hand. Around here it’s usually Bragg Liquid Aminos (tastes akin to soy sauce) and sweet chilli sauce. Tofu and/or toasted nuts add a bit of pizazz, as well as a protein hit.       Does purchasing spring onions not seem like an awful waste? I mean they do work exceptionally well in salads, quiches, as pizza toppings and, well, anything that you’re feeling too lazy to chop up an ordinary onion for. However, that’s just the white ‘rooty’ part, and not the whole spring onion. So what on earth do you do with the rest – i.e. the majority – of the onion? In my house the dark green fronds often face a grisly execution on arriving home from the supermarket.  They take up so much blasted room in the fridge, weep gunk all over the place and generally disintegrate into a state of oozy floppiness that we usually resort to giving the bunch of spring onions a good ol’ haircut with the kitchen scissors before relocating them to their new home. Fortunately this Fried Tofu Salad with Chilli Peanut Sauces changes things. Because, wait for it….it only uses the dark green part of the spring onion. I’d like to say it was a stroke of genius on my part but it aint. Truth be told I’d already selected the recipe before cottoning on to its clever inclusion of the poor abandoned green parts.
