It’s a glorious summer day, the sunshine warming one’s back and adding a spring to the step. The kind of day where you’d be daft to not pack up a picnic and trot off to the closest park/beach/nature reserve. Have work? No issue, throw down a picnic rug in the backyard when you get home and make dinner a picnic affair. If you live anywhere like Melbourne, the climate is darn unpredictable – hot one day, stormy the next and grey drizzle the following. So embrace the glorious weather while it’s there! A staple of any decent picnic is bread. Yes, there’s couscous, quiche, pasta salad and other starch/carbohydrate based meals galore – all brilliant in their own right – but it’s nigh on impossible to beat a freshly baked loaf of bread. It needn’t be of your own making, especially if you’re pressed for time, and even if you do have the minutes up your sleeve it needn’t be fancy or tear-your-hair-out difficult. Welcome to the world of soda bread! Continue reading →

      Flat Breads

You might have already guessed that I’m big on bread. And sure, eating it is fine and dandy, but it’s the actual process of making it that really tickles my toes. There’s a multitude possibilities – sweet, enriched doughs, basic soda breads, damper, a simple white loaf, hardier whole-wheat ones studded with grains or even nuts/seeds, pizza bases, flat breads…And today my friends it’s the flat breads that’ll be stepping into the spotlight. With a shorter rising time than many breads they don’t require nearly as much patience as some of their kin (you only have to leave the dough to rise once). And don’t bother turning the oven on – you won’t be needing it! A frying pan will do the trick, thank you very much. Continue reading →

      Fruit, Seed & Walnut Bread

Going out for breakfast to celebrate special occasions/the completion of something significant is a tradition in my family. Fortunately it didn’t take much to cajole two of my housemates into doing so after I had finished working at the Australian Open. We ventured to a brilliant joint on the other side of Melbourne and were duly rewarded with the three meals we ordered. However (there’s always a however isn’t there?) I was also able to smugly proclaim that whilst their fig, apricot and pistachio loaf was very tasty indeed, it did not quite live up to that made by yours truly. Boastful? Moi? Let’s just say that this Fruit, Seed & Walnut Bread is one of the best things you’ll ever put down your gullet. Modest, I know. Continue reading →

      Mushroom & Zucchini Strata

Listen up and listen well my friends: this Mushroom and Zucchini Strata must chill overnight. Or at for at least five hours. Why? I’ll get to that later. I simply felt obliged to point this fact out to you now, rather than just before you cheerily go to put it in the oven. Discovering that what you had prepared for tonight’s dinner is now destined for tomorrow night will wipe that happy “I’m all prepared” smile right off your face. Been there, done that. And that is why I’m covering my back by giving you fair warning straight from the start. Two words: plan ahead. Hang on a sec, I can see you’re about to skip to another recipe. I understand – I do that too. Please stay. Planning ahead isn’t a drag (well at least not all the time), it’s actually very useful. Planning prevents situations where you’re frantically searching the net for a quick, tasty recipe to cook. Right. Now.  It’s much nicer to still spend more time than you really should looking for recipes (because if you’re anything like me it’s an addiction), but with no sense of immediacy. And all the chill-time induced waiting will only whet your appetite for this strata even more. It’s lip-smacking good. Shall I explain why you have to wait so darned long for it? Sounds like a plan. Rosemary & Sultana Soda Bread

Afraid of baking with yeast? Never fear, soda bread is here! Okay, so that was a totally lame – and not to mention corny – statement. I’m sorry. What I was trying to do is get you to get excited about the concept of soda bread. Why? Anyone can master it, even the most novice of bakers. I promise. Less finicky than scone-dough and certainly less stressful than yeast based breads (because, well, it doesn’t contain yeast), this is definitely one to add to your baking repertoire, no matter how small (or non-existent) it may be. So it may not be quite as easy as a melt-and-mix chocolate cake, however the result is just as pleasing, if not more so. And sure, you can convince yourself that chocolate cake is acceptable for breakfast, lunch and afternoon tea, but whilst that’s nice in theory, in reality it’s not. On the other hand, this Rosemary & Sultana Soda Bread is actually suitable for all three. And is oodles healthier than a slab of cake. Did I mention that it’s scrum-diddly-umptious too? No? Well there you go. It’s ‘rustic’ baking at it’s best. Continue reading →
