      Fruit, Seed & Walnut Bread

Going out for breakfast to celebrate special occasions/the completion of something significant is a tradition in my family. Fortunately it didn’t take much to cajole two of my housemates into doing so after I had finished working at the Australian Open. We ventured to a brilliant joint on the other side of Melbourne and were duly rewarded with the three meals we ordered. However (there’s always a however isn’t there?) I was also able to smugly proclaim that whilst their fig, apricot and pistachio loaf was very tasty indeed, it did not quite live up to that made by yours truly. Boastful? Moi? Let’s just say that this Fruit, Seed & Walnut Bread is one of the best things you’ll ever put down your gullet. Modest, I know. Continue reading →

      Panforte

Raising the question “what should I bake?” is a dangerous task at the best of times. It puts one in a particularly perilous position. What if one actually doesn’t want to make what is suggested, and in some cases demanded (I’m looking at you here, little sis)? You’d think I’d have learned by now. Hmph. Not the case. My younger sister’s response is often obscure, vague, or difficult and downright complicated to make. In her world of baked goods time-frames and effort required don’t exist. Dad’s tends to border on predictable, if not repetitive. Old favourites such as Bran Muffins or Zucchini Bread. The Brampton ‘classics’. When I raised the question with S and B mid last week I honestly didn’t know what response to expect. Conventional? Complicated? Kooky? Where does the Italian ‘cake’ Panforte sit? Somewhere amongst all three. Continue reading →

Today is one of those days that makes you want to leap around like a baby deer in spring. Why? Because it feels like spring! That’s not stating the obvious too much is it? Now, I know it is only mid July so technically we are only halfway through winter. I probably shouldn’t get too  eager should I? The thing is, it’s kind of hard not to feel joyous when the sun is shining and it’s currently 23.3C (yes I’m a weather nerd). It’s the kind of weather that calls for sitting in the garden and sunning your legs. Is really sad that I’m ecstatic to be wearing a skirt again? After spending the last week with a terrible head cold and sounding like Janice from Friends I feel as though a healthy ‘glow’ is in order. A little vitamin D to help keep future colds at bay. I awoke on Saturday morning with a sinking feeling. It was cold, it was raining, it was grey. Usually I enjoy this kind of weather, as it is impossible to feel guilty staying holed up inside baking when it is so miserable out. However, Saturdays mean netball. Netball that takes place outdoors. To say the least I did not particularly feel like running around a slippery court, with hair pasted to my forehead, trying to not to jar my icy fingers on the ball. Does it sound like I have done numerous times in the past? Not fun.

Thankfully, by the time midday rolled around all games had been cancelled. So what better while away the wintery afternoon with than  baking? I was in a ‘old-fashioned’ mood – I donned my headscarf and wished I had fifties housewife dress to dance around the kitchen in. I really must buy one, just for those kind of days. Scones were most definitely in order. And only the best kind would do – light and fluffy with crispy golden brown edges. Rather than settling for a standard round fruit scone (because fruit makes it seem so much healthier), I decided to jazz things up. Continue reading →

The rich nutty aroma of these muffins cooking in the oven is most certainly an incentive to leap roll out of bed on a cold, drizzly morning. Or, you know, get out of bed to actually make them because either everyone else is too lazy or you’re flying solo. In fact the latter is a far better situation to be in, as you will want to scarf savour the all twelve of them in one sitting. The smell conjures up images of netball carnivals, cross country races, lunch box snacks and lazy weekend afternoons – basically my childhood encased in one moist yet fluffy muffin. They were – and still are – Dad’s go-to food to bake when we were expecting guests/visiting. Perhaps my sister and I were just a little strange as kids – I remember being confused at looks of horror on our friends faces when they realised that there was no chocolate, no jam, and heaven forbid no conventional sugar in their ‘supposed’ afternoon treat. My sister and I loved them. The honey, along with the sultanas, adds more than enough sweetness, just proving that you can’t judge before you try! Feel free to substitute the honey with rice sugar or agave syrup, though I do think that it provides a distinctive (yet mellow) flavour. Continue reading →
