      Flat Breads

You might have already guessed that I’m big on bread. And sure, eating it is fine and dandy, but it’s the actual process of making it that really tickles my toes. There’s a multitude possibilities – sweet, enriched doughs, basic soda breads, damper, a simple white loaf, hardier whole-wheat ones studded with grains or even nuts/seeds, pizza bases, flat breads…And today my friends it’s the flat breads that’ll be stepping into the spotlight. With a shorter rising time than many breads they don’t require nearly as much patience as some of their kin (you only have to leave the dough to rise once). And don’t bother turning the oven on – you won’t be needing it! A frying pan will do the trick, thank you very much. Continue reading →

Being the obsessively organised creature that I am, I had pencilled in ‘write blog post, or else’ into my diary for Monday evening. I.e. right now. What I hadn’t factored into this planning was roasting my finger-tips until very ‘well done’ indeed at work just hours ago. Ouch. Consequently said fingers make little mighty loud squeals of protest each time they hit the keyboard. The ‘or else’ was looming. Fortunately I still have a stash of pre-typed posts up my sleeve…this Apple Pecan Flaxseed Loaf is one of them. Go forth and read if you fancy. Meanwhile these fried finger-tips are on a mission to seek relief in something icy. Continue reading →

Uni classes have officially finished for the semester, with this week dedicated to study prior to exams commencing. It’s a little over half way through day one of revision, revision and yet more revision and I’m already dreaming of all the baking I could be doing in another life. The kind of baking that requires little thinking. Minimal brain power. The kind that involves face-planting into said baked good and giving zilch consideration to other matters going on in the world. Baking is satisfying and straightforward. It’s productive. You’re guaranteed to get a pretty darn good end result (should we tack on a ‘most of the time here’?). You can see (and sneakily taste) the progress. Quite unlike some other aspects of life…I wonder what they could be? Revision-time requires the simple things in life. For when your brain resembles scrambled eggs, a muddle of words and numbers. It requires homely things. And yup you guessed it, this is a homely cake. It’s neither fancy nor fussy to prepare. What are you doing this mother’s day? Are you a cynic who slanders the mere thought of yet another commercialised holiday? Soppy cards, posh lunch deals, spa breaks, the lot. Do you quietly moan, yet celebrate it anyway in a more subtle manner? A bunch of fresh flowers or breakfast in bed. Or, do you wholeheartedly embrace the opportunity to celebrate? Flowers, cards, breakfast, lunch and a spa break to boot. I’m always torn when it comes to such events. Is it rude to ignore them? It is it an overt display of consumerism to embrace them? In the end I usually decide that ‘celebration’ is justified a) if the card is homemade (and by you, not from that funky store down the road) and b) if it involves good food (again, homemade is preferable). I am a terrible, terrible person. You must think I’m unable to keep my word. There may be some truth in that. It’s been over five weeks since I last posted. Five weeks. Sad thing is, I’ve had plenty of ‘back ups’ sitting here, patiently waiting to be used. There’s no excuses to be had. Later this week I’ll delve more into what has been going on, perhaps even try to justify my severe lack of commitment. On second thoughts, don’t hold me to it. Last weekend I knocked together a batch of Oatmeal Raisin Cookies for our residential college’s ‘celebration’ of Earth Hour. Truth be told they weren’t these ones – golly, not only do I go back on my word, I’m hypocritical too. This ain’t putting me in a very good light is it? However, a girl can only work with the ingredients she’s got on hand. Butter wasn’t one of them. Let’s not get too side-tracked though – these are significantly tastier and as stated below (yes it is one of those ‘pre-written ones’) you really do need to go make some. If you can trust me on anything at the moment, it’s that. In the meantime, I’ll get down to preparing a more substantial post for you! Continue reading →
