      Sitting in the shade at a cute little café centred slap bang in the middle of a park is as good a place as ever to write blog posts. However as it draws closer to midday and the morning coffee/cake crowds disperse, the lunch smells start wafting by. Tantalising. The dad and small child seated at the table next to me have just ordered a rather large bowl of chips, and that juice I ordered over an hour ago is no longer cutting it in the stop-the-tummy-rumbles department. It’s times like this where I berate myself for not packing a small snack to consume on the way home, to keep the blood sugar levels from nose-diving to a babbling bambi level before one has a chance to prepare a decent lunch. Because when you’re starving, making lunch seems like an all too Everest task. This Chocolate Sultana Slice isn’t the healthiest of specimens, but hey it ain’t as indulgent (and heart-stopping calorific) as a brownie and it transports well. Continue reading →

      I am a terrible, terrible person. You must think I’m unable to keep my word. There may be some truth in that. It’s been over five weeks since I last posted. Five weeks. Sad thing is, I’ve had plenty of ‘back ups’ sitting here, patiently waiting to be used. There’s no excuses to be had. Later this week I’ll delve more into what has been going on, perhaps even try to justify my severe lack of commitment. On second thoughts, don’t hold me to it. Last weekend I knocked together a batch of Oatmeal Raisin Cookies for our residential college’s ‘celebration’ of Earth Hour. Truth be told they weren’t these ones – golly, not only do I go back on my word, I’m hypocritical too. This ain’t putting me in a very good light is it? However, a girl can only work with the ingredients she’s got on hand. Butter wasn’t one of them. Let’s not get too side-tracked though – these are significantly tastier and as stated below (yes it is one of those ‘pre-written ones’) you really do need to go make some.       This Apple Sultana Loaf was not intended to embody the Taste Without Waste philosophy in a literal sense. Oh no. It had rather been assigned to the other major position of relatively-healthy-but-still-super-tasty recipe. After an unexpected turn of events it’s now also taken on the role of recipe-that-can-use-up-ingredients-that-really-shouldn’t-be-used. Taste Without Waste on two fronts…we’re doing well today aren’t we? How did we happen upon this double whammy? For the past week I’ve been staying at a family friends house and one afternoon decided to bake this loaf. After rummaging through their dried fruit stores I could not see no hide nor hair of sultanas. There was however two packets of mixed dried fruit. Why, I could just pick the sultanas out! Problem solved. Better than making a trip down to the supermarket and back, right? Hmmm. After opening the first packet (which had already been opened at some point) I wasn’t so sure. The stuff was practically fossilised. Dry and crystallized to say the least. The best before date? November 2010. Continue reading →

      Rosemary & Sultana Soda Bread

      Afraid of baking with yeast? Never fear, soda bread is here! Okay, so that was a totally lame – and not to mention corny – statement. I’m sorry. What I was trying to do is get you to get excited about the concept of soda bread. Why? Anyone can master it, even the most novice of bakers. I promise. Less finicky than scone-dough and certainly less stressful than yeast based breads (because, well, it doesn’t contain yeast), this is definitely one to add to your baking repertoire, no matter how small (or non-existent) it may be. So it may not be quite as easy as a melt-and-mix chocolate cake, however the result is just as pleasing, if not more so. And sure, you can convince yourself that chocolate cake is acceptable for breakfast, lunch and afternoon tea, but whilst that’s nice in theory, in reality it’s not. On the other hand, this Rosemary & Sultana Soda Bread is actually suitable for all three. And is oodles healthier than a slab of cake. Did I mention that it’s scrum-diddly-umptious too? No? Well there you go. It’s ‘rustic’ baking at it’s best. Continue reading →
