      It’s a glorious summer day, the sunshine warming one’s back and adding a spring to the step. The kind of day where you’d be daft to not pack up a picnic and trot off to the closest park/beach/nature reserve. Have work? No issue, throw down a picnic rug in the backyard when you get home and make dinner a picnic affair. If you live anywhere like Melbourne, the climate is darn unpredictable – hot one day, stormy the next and grey drizzle the following. So embrace the glorious weather while it’s there! A staple of any decent picnic is bread. Yes, there’s couscous, quiche, pasta salad and other starch/carbohydrate based meals galore – all brilliant in their own right – but it’s nigh on impossible to beat a freshly baked loaf of bread. It needn’t be of your own making, especially if you’re pressed for time, and even if you do have the minutes up your sleeve it needn’t be fancy or tear-your-hair-out difficult.       My grandmother is one of my ultimate cooking heroes. She’s up there with Hugh Fearnley-Whittingstall and Rachel Khoo. I cherish the memories of being a wee lass and sitting on the counter/kneeling on a chair/standing on tiptoes at the counter/wearing the new apron that we sewed (confession: I still wear it) helping her shape biscuits, sift dry ingredients, cream butter and sugar, and eventually doing the whole thing myself. Never pushy, never impatient, ever happy to answer the many mundane ‘why granny, why?’ questions, she was – and still is – the ideal culinary instructor. She’s been making these cheese scones for yonks, and for a person who isn’t the biggest fan of savoury scones these sure do okay.       It’s university exam number one tomorrow. That means at this point in time zilch brain power remains. Coherent sentences…what are they again? I was trawling through my rapidly dwindling ‘back up collection’ and came across this from mid-last year. Clearly it had been left, abandoned, in the depths of the folder due to a) the terrible photos and b) the slightly mortifying writing skills. Now, I began to touch up both and then stopped. Isn’t there something quite grounding about acknowledging that you’ve produced a work/done something that wasn’t quite perfect? And about leaving it that way. Not beating yourself up about it. To remember that life’s about balance, not perfection. To have a laugh about it if you can (and hope to god things have improved somewhat since then) and move on.       Grilled cheese sandwiches. The ultimate comfort food/cold weather food/can’t be bothered making a ‘proper dinner’ food. Let’s be honest. It’s anytime food. Not just for kids – we ‘grown-ups’ can eat them too. It’s perfectly acceptable grub – even for dinner – especially when jazzed up with nutritious extras. In this particular specimen you’ve got cannellini beans for fibre and protein, avocado for healthy fats as well as a kazillion other wellness-boosting nutrients and beetroot to cover your veg bases. Wait a minute, avocado counts as a veg too! Let’s just forget about the slab of cheese wedged in the middle, and the fact that the bread is lathered in butter. Because, hey a little fat never hurt no-one (given that it’s not the major component of the meal). There’s simply no point trying to omit them – you wouldn’t have a grilled cheese sandwich anymore would you? Continue reading →

    • Quinoa Veggie Bake

      I have read countless articles and blog posts in the past few years expounding the marvels of quinoa. It’s been touted as the new super food. A wonder grain. A nutritional powerhouse. At first I was skeptical and wrinkled my nose at the thought of it. Can anything really live up to those kind of standards? It turns out it can. Quinoa is low GI, high in fiber, gluten-free and packed with iron and vitamins B and E. It contains all eight essential amino acids along with lysine (which very few grains have), making it a complete protein source. For a vegetarian (or anyone interested in healthy eating) that fact is kind of like winning the lottery. Oh and it’s extremely versatile. I have had it in soup, salads, patties/burgers, for breakfast and even in muffins. If you are trying it for the first time the texture may seem a bit odd and I have to admit that it did take me a while to get used to (and appreciate) it’s uniqueness. On the plus side it readily takes on the flavour of whatever it is cooked in (be that stock, fruit juice, milk…the options are virtually endless) so it rarely fails in the taste department.
