    • Vegetarian Chilli Con Carne

      It’s been a month since I finished exams, a month since I moved out of college for the summer. You’d think that would be plenty of time to get over the I-never-want-to-do-an-ounce-of-writing-or-study-ever-again funk and start blogging again in earnest. Hmmm not so. It’s taken a sunny day (sunshine always helps, does it not?), packing up a backpack and walking two kilometres to a park with a café (and a smashing selection of fresh juices) to finally get the ball rolling again. The will to cook/bake has been there in force, but the mere thought of sitting in front of a laptop to do anything more than look at other people’s recipes hasn’t been particularly welcoming. But not to worry…we got there in the end! And just to highlight how sparse blog posts have been over the last six months, this is a Chilli Con Carne I made back over the winter break (what seems like eons ago now).       Now if you asked me to give an impromptu speel on fair trade v free trade/third world debt/the transatlantic slave trade/BRICS/the scramble for Africa you’d receive a a well put together, mostly coherent piece. At least we’d hope so, considering that’s what I’ve been studying all day. But if we were to discuss food? It’d be a pretty poor effort on my part. Unusual indeed. You see, I talk about food a lot. If you’re having a conversation with me, food will come into it at some-point. Guaranteed. Today? I’ll eat it yes, but discuss it? No. I’d rather be spending that time eating some more (study munchies, anyone?). Therefore, in lieu of Monday’s post we’re taking another trip back through the ‘not-so-good’ archives with this ‘gem’ from August last year.       It’s university exam number one tomorrow. That means at this point in time zilch brain power remains. Coherent sentences…what are they again? I was trawling through my rapidly dwindling ‘back up collection’ and came across this from mid-last year. Clearly it had been left, abandoned, in the depths of the folder due to a) the terrible photos and b) the slightly mortifying writing skills. Now, I began to touch up both and then stopped. Isn’t there something quite grounding about acknowledging that you’ve produced a work/done something that wasn’t quite perfect? And about leaving it that way. Not beating yourself up about it. To remember that life’s about balance, not perfection. To have a laugh about it if you can (and hope to god things have improved somewhat since then) and move on.     • Aromatic Roasted Chickpeas

      It was never my intention to post this recipe. I was making baked samosas for dinner – so much healthier than the traditional deep-fried ones and just as tasty – and felt that the meal was lacking in protein. I could have substituted some of the potato with mashed chickpeas/lentils, but didn’t want to alter the recipe too much. I’m always disinclined to do that on more ‘particular’ first-time recipes. Additionally, I would run the risk of being berated for ‘lying’ about making samosas for tea as they would no longer be samosas in a certain persons eyes. Feeling particularly lazy (and before you judge, rolling out and filling samosas isn’t exactly a walk in the park) I wanted something that would cook while the samosas were in the oven. Roasted chickpeas? Bingo. I’ve made these spiced chickpeas before, but despite seeing a number of recipes floating around the net, I’ve never tried roasting them. Silly me. I didn’t know what I’d been missing out on. I warn you now, roasted chickpeas are addictive. And very, very moreish. Forget crisps, wedges and pretzels, these are the snack that all the cool kids are eating. High in protein, low in salt and fat. Big on flavour. Talk about taste without waste! Continue reading →

    • Chai Tea

      After my first experience with chai I was positive that I would never be a fan. It was on my second last day in Kenya at café situated in a very western shopping mall (sadly it just highlights how our western influences are slowly – and sometimes not so slowly – permeating every corner of the earth). I figured where better to try chai for the first time than a nation whose food is heavily influenced by Indian cuisine? Unfortunately, the drink in question was lacking in flavour and sickly sweet. So much so that I struggled to finish it, which is saying something as I pride myself in not being a fussy eater. By that point I was on my last few Kenyan shillings, therefore it was disappointing to see them disappear on such an ordinary beverage. The memory sticks out as it was one of the only ‘negative’ encounters that I experienced during my five weeks in Kenya. Is it too strange to say that the chai was more mood-dampening than my brush with typhoid? It probably is, but after hearing so much praise about chai I had very high (and perhaps unreasonable) expectations. Continue reading →
