      Quick Chickpea & Mushroom Curry

Now folks, here’s my top tip going into 2016. Don’t go buy yourself a new laptop. No matter how old your current one is, cling on to it for dear life. Give it CPR if you must. Why? Because it will prove to be two of the most painful days of your recent existence. More painful than the half marathon. And far less rewarding. Well, if you’re moi anyway. Perhaps you’ve got a little leprechaun dancing around showering you with luck. Perhaps banks and Macbook Pros actually like you. And don’t find pleasure in trying to a) humiliate, b) inconvenience/time waste or c) completely and utterly zap any sort of hope from you. Right at this moment it’s 10.18pm (yay for typing out posts that you actually handwrote!) and I’m curled up in bed feeling like, well, poo. Sorry, there’s no other way to put it. Continue reading →

Very rarely are things as bad as you predict them to be. For the past week a certain someone has been freaking out big time about starting a new job. A job that will only run for three weeks. A meager 21 days. To the point at which she’s had enough kittens to fill a cattery several times over. Fluctuating between being snappy at everyone/thing, mega-hyper and sitting listlessly on the couch morosely contemplating her ‘bad decision’, this certain someone hasn’t exactly been bundles of fun. However, as most first-days tend to prove, over-thinking is never helpful – it often leads to negativity and catastrophising. You see, the job really wasn’t all that bad. Yes it was a 10 hour shift, yes the only time one sat down was to go to the bathroom twice (over-sharing? Ah well), yes one has a blister forming from cutting so many vegetables/chicken/herbs etc. And yes one has a nasty burn on her forearm (the customary welcome-back-to-the-commercial-kitchen present), but all-in-all the shift was fine. Quite fun actually. My oh my, who would have guessed? Continue reading →

      Spinach and Almond Pesto Pasta

I gain an immense amount of satisfaction from creating healthier versions of much loved recipes.  A nutritional makeover. At times I fret over how just happy I become when the transformation is successful. Too happy. Regardless, you can’t deny that being able to eat favourite ‘unhealthy’ dishes more often (because, they’ve been, well, ‘healthified’) is cause for some celebration. The major downside of some ‘healthed-up’ versions is that they are often inaccessible or unappealing to many home cooks, either due to obscure ingredients or lengthy preparation practices. However, you need not be wary of this particular recipe – it’s not overtly brazen at all. Sweet, juicy roasted tomatoes, creamy pesto and whole-wheat pasta..why it’s virtually a simple weeknight meal! Continue reading →

      Spinach & Ricotta Gnocchi

Today’s million dollar question: how many types of gnocchi are there? What’s that? Speak a little louder. Oh, just the potato one? Hmm not quite right. Turns out there’s three. You’ve got Gnocchi Romaine (made from semolina), Gnocchi Parisienne (made from choux pastry) and the aforementioned ‘potato one’ – Gnocchi Piedmontaise. I’ve made the former and latter and could ramble on for a while about the various ins and outs of each one, but a) that would probably send you to sleepy land and b) I want to talk about something else. That something else being this Spinach and Ricotta Gnocchi. I know what you’re going to ask. Please don’t. I haven’t the faintest clue what ‘category’ it fits into. Does the ‘yummy type’ count? • Hidden Greens Smoothie

I never thought I would be one to jump on the green smoothie bandwagon. It resided in the realm of healthy-but-too-weird. Sure I’m smitten with banana smoothies, particularly if they contain a dash of nutmeg and cinnamon. Berry smoothies are blissful and the colour alone is enough to brighten ones day. Mango, passionfruit, papaya…all fine with me. But a smoothie that is green and has vegetables in it? I think I’ll pass, thank you very much. I strongly believe that you should never judge a book by its cover, yet the words green and smoothie just don’t correlate in my head. Surely it must be some kind of evil witchy brew? Or at least like the medicine that mum used to force-feed you, extremely good for you but awful all the same. I was positive that green vegetables and smoothies should not exist on the same wavelength. Just no. That was until I chided myself for being a chicken and decided to take the jump. In recent times their popularity has skyrocketed, and that either means that everyone has taken leave of their senses and transformed into green smoothie monsters, or heaven forbid, they actually taste pretty good.
