      Chakchouka/Baked Eggs

As I regularly have to remind my Northern Hemispherean friends, we in the South live a topsy-turvy life. Whilst many people are moving into the months of sunshine, and ice-cream, and refreshing cocktails, we in the South are flicking on that ‘hibernation mode’ switch. I’m currently spending two weeks of my winter break back in Western Australia. It’s rained. And rained. And rained. And then rained some more. It’s cold – enough so that we’re reaching for scarves and beanies and layer after layer of sweaters. Yeah, it’s nothing like a ‘proper’ winter with snow and howling winds (though we do get those from time to time) and below 0C temperatures, but for us it’s still damn wintery. Continue reading →

Tomato & Feta Tart with Brown Rice Crust

We discussed the merits of having one’s own brood of chooks here on Wednesday. Today’s recipe is all about highlighting the most obvious reward. Beautiful, orange yolked free-range eggs and readily available (unless your chook is moody) at that. I couldn’t not prepare some sort of tart/quiche with tip-top eggs sitting in the little wicker basket just waiting to be used. In all honesty this Tomato and Feta Tart with Brown Rice Crust isn’t the optimum egg user within the quiche department. It uses a mere four. However, you’ll find four is plenty enough to get your eggy fix. Quality over quantity right? Continue reading →

Crunchy Tomato, Pumpkin, Smoked Cheese & Avocado Salad

We’ve recently been inundated with bread (more on that in Wednesday’s waste post) and as a result it’s been an imperative that I devise meals incorporating it in ways other than a conventional ol sarnie. Don’t get me wrong, there’s nothing at fault with a good sandwich, but there are only so many days in a row you can have one for dinner without going a little insane. Last night’s venture involved transforming a few innocent slices of bread into herby, garlicky, crispy croutons. Paired with creamy avocado, cubes of smoked cheese, peppery rocket, sweet, luscious tomatoes, chunks of roasted pumpkin and crunchy pepitas, they evolved into a salad highly suited to a scorching hot evening. I’m all about balancing healthiness (the whole salad thing covers that base pretty well) with indulgence, and the balsamic-maple dressing gave this salad the finishing touch – sweet, tangy and rich, yet not in-your-face over the top. Spring. Blooming flowers, lambs, ducklings, the first (decent) strawberries. Happy days. But not entirely. It’s also that awkward in-between period when the weather doesn’t know what to do with itself, jumping from rain to bright skies and sunshine in moments. This year the change was so rapid that we went from relying on the heaters one day to contemplating dragging out the air conditioner the next. This is my first full year in Sydney, so I’m not expert on the subject, however I’m pretty sure that 29C on the last day of Winter (and the week of high 20’s that followed) is decidedly unusual. The change felt quite final when I ventured out for my early morning run on Tuesday and no longer felt the cold bite of air on my face. Instead I was confronted by a warm wind. Sad times, I’m telling you, sad times.

There’s no question that it’s a tantalising season – conjuring thoughts of languid days at the beach. It’s also bittersweet – no more excuses for hours spent curled up on the sofa with a mug of hot chocolate and good book. Am I the only that feels confused with the onset of spring? In the past week I’ve spent hours excitedly trawling the net for summer dresses and bikinis (it’s a tactic designed to prevent me spending money as I’m less tempted to actually buy anything). At the same time, I’ve also come to the depressing realisation that it’s now far too late to try making that Autumn Vegetable Stew recipe I bookmarked way back in April. Behind the times? Just a bit. • Penne with Onion and Tomato Jam

If you are searching for a twist on the standard pasta+tomato sauce combination then it’s your lucky day. Behold Penne (or any pasta really) with Tomato and Onion Jam! Otherwise known as sophistication in a bowl. The thick, rich yet zesty jam clings to the pasta impeccably, eliminating the potential for any irritating runny sauce left in the bowl. You will be able to mop up every last bit of it with the pasta, ensuring that none goes to waste. In saying that, penne is ideal as it has ridges that hold the sauce well and has slanted ends that are designed to ‘scoop’ it up. Continue reading →
