I hope you’re well and truly into the swing of all things Christmas baking by now! Or at least more so than me. With less than a week to go I’ve done next to nothing in terms of producing Christmas related fare. Last year I was all over it like a rash. We had Vanilla Kippels, Fruit Mince Pies (admittedly the latter was posted after Christmas, but that’s just being super organised for the following year, right?), Christmas cake, dairy free steamed puddings…the lot. Time has run away from me this year. It doesn’t help when you’re barely around a kitchen long enough to cook normal meals, let alone special Christmas goodies. Mind you, there’s plenty that can be done in a week! You’d be surpised how much cooking can be packed into a day with a little dedication, a lotta elbow grease and some bangin/ tunes. Somehow this post has been lost in the abyss that is my blogging folder. Written over a year ago, it’s nigh on time to share it with you. And fitting too – we’re off down the coast for a few days, staying at a friend’s holiday shack.  We undertook a similar venture this time last year and among the many items we baked to take with us, this Apple and Date Cake was one of them (only thing was it didn’t last long because we were all too greedy). Although it won’t be accompanying us on this particular trip who knows, we may make it down there – the ingredients will most certainly be packed for if the right time arises! Continue reading →

I’m currently in class being taught how to set up a travel blog for one of our assessments. Huh. Think we can check the ‘yeh-I-know-how-to-blog’ box, thank you very much! After trawling through old posts I realised that this particular number hadn’t been published yonks back – some pea-brain forgot to hit the ‘publish’ button! No more faffin’ around – here it is.

Right peeps today it’s time to get serious. Don’t look at me like that. I do mean it. We’ve got something to talk about. Something that for all we claim it isn’t, is still taboo. And no it’s not your kinky bedroom adventures. That you can keep to yourself thank you very much. Today we’re talking about mental health. Among young adults (if spoken about at all) it’ll be in hushed voices, as though it’s something that only someone else could suffer from. The other option? We joke about it. Laugh it off. I know I’m culprit to it. Something not going quite right? Send yourself up about it. Pretend it really ain’t that bad (admittedly sometimes that’s the truth – over dramatizing is not completely unfamiliar territory). Sure, this can be a way of bringing something to the surface that you may not otherwise have had the guts to, yet it also dismisses the reality of the issue, diminishes the significance. Hey, it’s actually okay to admit that life’s a touch tough at the moment – perhaps more than a touch – and to not make a joke out of it. Continue reading →

Why is it that birthdays are always the event that causes one to stop and take stock of life? To put one in a contemplative mood, a reflective headspace. Today I reached the big two-oh mark. Two decades. If that’s not damn scary then I don’t know what is. Maybe you don’t freak out on birthdays. You simply acknowledge them and go on your merry way. Some people, however, aren’t quite so calm and collected – you’re looking at the girl who had a breakdown the day she turned sixteen after listening to Taylor Swift’s ‘Fifteen’ and realising she would never be fifteen again. Gosh, that’s not one, but two confessions I’d like to retract…birthdays also tend to prompt some people (I wonder who that could be?) to become brutally honest. But before such musings spill out in what is likely to be a serious case of word vomit, we need to acknowledge something important. That cannot be ignored. What’s that? Birthday’s need cake. And if not cake, then cupcakes. You see, it aint a birthday if there’s not some sort of sweet indulgence to be had. Unless you’re one of those people – choosing savoury over sweet? Humph. First recipe post for 2013 2014! We’ll get there with the date change. It usually clicks in around March. Anywho, how are those goals (we’re not calling them resolutions, remember) going? Wavering on any yet? I surely hope not. Just when you thought you were done with all that New Year philosophical rah-rah, here’s a few more lifestyle changes to consider. With the help of these Apple Pecan Cinnamon Rolls of course. If you’ve already got the following ‘ideals’ down pat, good for you. We’ll let you keep that smug grin. For the moment, anyway. Give it a few hours and it’ll be replaced with one of blissed out happiness. Light and fluffy with a sweet, nutty filling. Drizzled with an oozy, sticky maple topping. Don’t say I didn’t warn you about the side effects. What exactly are you going to learn from these Apple Pecan Cinnamon Rolls, apart from that they’re addictive with a capital A?  Let’s get started on those tasty life lessons. Continue reading →
