    • Vegetable and Lentil Pasta Casserole

I have a little sister. You might of heard of her before around here. How we pined after cookies that were out of our small-child reach. How we dealt calmly with the cockroach incident. I call her little. But it’s becoming a far stretch to do so. You see, she’s ever so slender but really not so little – a graceful gazelle that stands taller than moi, the aardvark. Pure habit I guess. Or a way of convincing myself that because she is little I shall always know best. What a strong inference. Perhaps I just call her ‘little sister’ out of fondness. I mean she’s sexy as all get out, but if I went around talking about my ‘sexy sister’ people would shoot me strange looks and subtly scuttle away sideways, until they could turn around and run, run, run awaaaaaay. Vegetarian Nachos

I sat down to study. Opened the lap-top. Read the first line of that journal article on Indigenous women and feminism. And the brain’s energy circuits shorted. Cue staring at the screen for a solid five minutes. Not taking a single thing in. Right. If study is out the window then surely blogging is in? Nada. This gal’s brain is currently sending out signals along the lines of bleuaighleighmmmmnop. And intermittently at that. It’s struggle town. Tonight’s post is going to be short and sweet, me thinks. This situation calls for a recipe that is beyond simple. Virtually impossible to make a boo-boo out of. Tasty, regardless of how terribly you maul it in your zombie-brain state. Look no further than Vegetarian Nachos. Boo-yah. Continue reading →

      Flat Breads

You might have already guessed that I’m big on bread. And sure, eating it is fine and dandy, but it’s the actual process of making it that really tickles my toes. There’s a multitude possibilities – sweet, enriched doughs, basic soda breads, damper, a simple white loaf, hardier whole-wheat ones studded with grains or even nuts/seeds, pizza bases, flat breads…And today my friends it’s the flat breads that’ll be stepping into the spotlight. With a shorter rising time than many breads they don’t require nearly as much patience as some of their kin (you only have to leave the dough to rise once). And don’t bother turning the oven on – you won’t be needing it! A frying pan will do the trick, thank you very much. Continue reading →

I’ve been distinctly depressed this week. Perhaps that’s a misuse of the term. Not in a serious-mental-health-sense, but more so the downhearted, disconsolate kind. What triggered this bout of dejectedness? I ashamed to say. Twas the film Insurgent. Alrighty, don’t judge too harshly! More specifically (and in a similar line to the Hunger Games etc. – i.e. those kinds of movies) it was the female protagonist in particular who prompted this downhearted spell. Why? They’re so goddam baddass it hurts. Never fail, every time I watch these kinds of films I want to a) be them or b) become a stunt artist. Neither of which is going to happen. Reality check. It’s not the killing, heart/gut wrenching situations, the perpetual fear/anxiety or even the complicated-yet-passionate blooming romance I’m after, nuh-uh. It’s that sense of being strong, of giving it absolutely everything and then some more, of wholly devoting yourself to a cause/situation. Of being fearless – “take my hand, drag me headfirst, fearless” (obligatory T-Swizzle reference there; it appears we’re letting loose with all the dorky confessions today!). Continue reading →

      Zucchini & Egg Parmigiana

Before the summer is out be sure to make the most of the bounty of vegetables available, and in particular zucchini. Zucchinis/courgettes/whatever you like to call them, are a brilliant vegetable. Baked, fried, souped, grated into muffins or cake, there’s endless opportunities. This recipe was inspired by the Green Kitchen Stories cookbook, a must buy for any vegetarian or ethically/health conscious eater. A lighter version of your traditional parmigiana, it’s an ideal meal for a warm weekend evening. Why the weekend? Well, there’s quite a process involved, but if you complete the tasks in stages it really feels like no hassle at all. The perfect recipe for those who like to potter about, doing a little here, a little there. You’ll be duly rewarded for your efforts, with a stunning dish – layers of sweet, fragrant tomato sauce, thin strips of zucchini, boiled egg, creamy mozzarella, punchy parmesan, fresh basil and mint leaves. Hungry yet? Continue reading →
