      It’s become my mission over the past year to hunt down healthy desserts. When we were young, ‘pudding’ was a rare occasion reserved for social outings, family get-togethers and birthdays. I came back from Oxford to discover that they had morphed into a nightly event. I’m not complaining though  – I’ll greedily seize any opportunity to bake. However, eating self-saucing puddings, cheesecakes, brownies and other such indulgent items every night isn’t a healthy habit. And not one I planned on sustaining – some people (I’m looking at my sister here) could eat the moon and still remain beanpole thin, but we aren’t all blessed with those genes. I thus needed to come up with some sort of compromise. I needed to create desserts that incorporated the taste & sense of indulgence found in my sister’s favourites, yet didn’t require bucket loads of sugar and butter. Continue reading →

    • Blueberry Souffle Omelette

      This omelette is proof that becoming vegetarian has nudged me into becoming far more adventurous with my food. If you had asked me a few years ago what I thought about sweet omelettes I would have laughed in your face. “That’s daft, omelettes are meant to be cheesy!” I would have exclaimed. However during my morning stroll on Sunday I started musing about what I wanted to make for breakfast. I was craving something eggy but didn’t feel particularly enthusiastic about a savoury dish. French toast felt too heavy and I didn’t have the patience for a clafoutis. It was time to think laterally. Continue reading →

    • Deconstructed Apple Pie

      It’s a Saturday night and I’m standing in the kitchen staring at two pitiful Fugi apples and some short pastry off cuts. You would think I had more exciting things to do, but no. Most of the time this is as thrilling as it gets. Regardless, I was determined to do something productive with my evening.

      I had made mini quiches for lunch earlier in the day, resulting in the left over pastry. Usually I will roll the leftovers together and make a few more quiches which always end up a bit chewier due to the pastry shrinking  (you should let the pastry rest for 30 minutes after re-rolling but I always get too impatient. On this occasion I had run out of egg mix so more quiches were out of the question – I was too lazy to make more egg mix –  but didn’t want to just throw the pastry out.  Consequently it was shoved in the fridge labelled “deal with later”.     • Baked Apples

      Would you believe I had never eaten a baked apple until a few weeks ago? Well perhaps you would – after all we don’t know each other that well yet. Hopefully that will change in due course! Anyway, I was shocked to realise that I hadn’t. Come peak apple season our kitchen is brimming with apples waiting to be incorporated into scrumptious dishes. Apple crumble is a don’t-mess-with-me tradition in our family and I cannot remember a year that we haven’t made at least half a dozen batches of stewed apples. The look of pure horror on a friend’s face when she discovered me stewing apples a number of years ago was priceless. Apparently normal fifteen year olds don’t do that sort of thing, or at least not for kicks. Continue reading →

      It’s funny how seemingly ‘fatal’ kitchen mistakes can turn into wonderful inventions. What’s perhaps even stranger about this particular ‘mistake’ is that it wasn’t due to my muddle-headedness! My friend and I had been assigned to prepare desserts for our restaurant service at college. As an accompaniment to the date and walnut puddings that we were required to make we decided to experiment with a Chai flavoured ice cream. Alas, an hour into the session the campus was evacuated due to a power shortage. The evacuation morphed into a two-hour lock-out from the kitchens, so by the time we were able to continue our work there was little over an hour until service. Most definitely not enough time to produce and anglaise sauce and churn it into ice cream! Continue reading →
