      Chai Spiced Custard

      It’s funny how seemingly ‘fatal’ kitchen mistakes can turn into wonderful inventions. What’s perhaps even stranger about this particular ‘mistake’ is that it wasn’t due to my muddle-headedness! My friend and I had been assigned to prepare desserts for our restaurant service at college. As an accompaniment to the date and walnut puddings that we were required to make we decided to experiment with a Chai flavoured ice cream. Alas, an hour into the session the campus was evacuated due to a power shortage. The evacuation morphed into a two-hour lock-out from the kitchens, so by the time we were able to continue our work there was little over an hour until service. Most definitely not enough time to produce and anglaise sauce and churn it into ice cream! Continue reading →

    • Vegetable Casserole with Cheesy Herb Dumplings

      I’m sorry, this isn’t a pretty dish. But I won’t apologise too much as the flavour more than rectifies that. And as far as I’m concerned, any dish that manages to incorporate scone like substances into it is doing well. Casseroles with dumplings really are a brilliant invention, allowing you to turn a few basic ingredients into a substantial meal. Definitely something to keep in mind if you are on a budget. These dumplings burst with flavour due to Parmesan, wholemeal flour and oodles of herbs and gratifyingly soak up the paprika spiced juices. The rest of the dish is so healthy that it’s impossible to feel guilty eating ‘scones’ for dinner. Each time I make this casserole I wistfully stare at my bowl, hoping that a few more dumplings will suddenly materialise. I then swear that I will double the dumpling mix next time. And promptly forget to when the time rolls around.  I haven’t doubled the mix in the recipe below (at the moment it makes one medium sized dumpling per person) but if you are anything like me and have a penchant for scones I would advise doing so!       One topic that is sure to come up regularly on this blog is that of our struggle to incorporate adequate protein into our diet. It usually results in an argument with me (the cook) on one side and my father and sister hotly disputing my decisions on another. I am determined to uphold my belief that food has the potential to reduce wastage in many different ways, one being wasted social opportunities – food is such a good way of bringing people together. However with our ongoing quarrels surrounding protein I fear that I may be proved wrong – a decent amount of ‘debating’ is healthy in any house hold, however I don’t want it to develop into something more than that, with food being at the root of the problem. Consequently I am on the hunt for a variety of different ways in which I can incorporate protein into our meals, without it always being in the ‘main’ dish. Continue reading →

      Preserving. It conjures up contradicting images of prettily labelled containers on checked tablecloths and body parts floating in rusty jars. Strange, I know. Aside from that it has been one aspect of cooking that I have always been apprehensive of. It is a tradition in our family to make some kind of jam – nectarine, mulberry and apple, apricot, mango, essentially whatever fruit is in abundance – each summer. But that is always a group effort and I am not responsible for coaxing it to the correct setting point, not burning the pot in the process and also not spilling it all over the kitchen table.       Unattractive meals are the bane of my existence. They make me want to stamp my foot and tear my hair out. It feels so unjust when you spend hours slaving (can you call it slaving when you’re enjoying it?) in the kitchen to prepare a delicious meal, only to be rewarded with a dish that looks like something the cat brought it. Humph. I have to admit that styling is not my strong point – I don’t have an artistic bone in my body. But I do try. Well, sometimes. Needless to say, I am extremely jealous of one of my good friends at cooking school who has an innate knack for presenting dishes beautifully. If she doesn’t go on to become a food stylist I will eat my boots. Continue reading →
