Spending New Years Eve/New Years Day battling a raging fever isn’t ideal. Far from desirable. Of all 365 days of the year you go into 2015 simultaneously sweating like a pig and shivering like a kitten caught in the rain. Woop woop! Yet whilst it’s not been particularly pleasant, there’s really nothing to  complain about. Sure I may whine about being unable to ‘properly exercise’ for two days in a row (two whole days). I might fret about the fact that – heaven forbid – I have to remain curled up on the couch in the biggest and baggiest dress I own (hellllooo clammy skin) reading until the worst of the fever passes. Big deal. Count yourself lucky girl. It’ll pass in due course. In any case a little sickness every now and then is a good reminder to value one’s good health. How was your Christmas? All things jolly, I hope. After significant preparation in the days prior, ours was a laid back affair (isn’t it nice when it all pays off?). Whole-wheat crepes and a fresh fruit platter got the day off to a cracking start. A moderately fast paced walk along the beach was next…Gotta make plenty of room for Christmas lunch! Some simple prepping in the kitchen – carving the stuffed chicken legs and vegetarian roast-loaf, roasting some crunchy maple and cinnamon spiced chickpeas for nibblies and so on – was followed by the unwrapping of presents. It didn’t take long with so few of us, but to be honest I’m more interested in the food. A late lunch with the extended family was the main event. When overseas I’m always asked “what do Australians eat for Christmas dinner?”. There’s a number of other typical questions – “why isn’t your hair blonde?”, “do you have a pet kangaroo?”, “did you ride it to school?” but we’ll leave those for another day. Continue reading →

Sometimes all you feel like is a simple dinner. No complex flavours, just good heart-warming food. Something that feels like an indulgence but is actually quite healthy. One that produces left overs – an easy lunch the next day, tasty hot or cold. This roasted butternut squash with spiced chickpeas does all of the above and is super versatile – I have made it in summer and plonked it on a plate with a colourful salad, and in winter it goes beautifully with roasted brussel sprouts and cauliflower. The chickpeas on their own make a moreish snack… Continue reading →
