      A one pot wonder indeedy is this Peruvian Quinoa Stew. Despite moving into a residential college that provides all of my meals, it felt fitting to salute the realm of ‘student nosh’. A term at Oxford was enough to have me sympathising with the baked spud, beans and cheese crowd. Meals that can be whipped up with minimum fuss yet pack a punch of goodies into you are what we’re after. Hearty, tomatoey and brimming with a variety of vegetables, this baby fits the bill. It’s got your protein and carbs well covered with the quinoa, requiring no ‘extra’ cooking for rice/pasta etc. Admittedly, there’s no truly green veg, however you could easily pop in a few florets of broccoli or some trimmed green beans. If that’s too much effort, simply slop it on top of a bowl of fresh baby spinach leaves. Easy peasy. Think of it as a bumper ‘superfood’ alternative to vegetarian chilli con carne.       These Quinoa Oat Bars are deceptive. They appear to be super healthy, an all-round nutritious snack bar. That’s not to say they aren’t (well relatively speaking) however they’re much more than that. How so? You could just as happily snaffle one of these up for dessert with a dollop of creamy yoghurt or vanilla ice-cream, as you would chow into one for a post-workout snack or breakfast on the run. This ‘fancy schmancy’ muesli bar is luxuriously chewy with a subtle sweetness (be warned sugar fiends, this may not be the one for you). When toasted the quinoa, apart from instantly elevating the street cred of these bars (why, it even makes them sound virtuous and healthy), lends itself to a sublime nuttiness. Throw in a handful of a trio Christmas coloured goodies – pistachios, dried cranberries and white chocolate – and you’ve got a groovy thing going on. Continue reading →

      Splurged on sweets/fatty foods over the weekend? In need of a health kick? Something to ‘reset’ your batteries? Look no further than these Millet and Quinoa Balls. There’s not a bad bone in them. These saint-like morsels contain a triple threat of protein with not one but two ancient grains in the form of quinoa and millet, as well as yellow moong dahl (substitute with yellow split peas if necessary). There’s shiitake mushrooms, pumpkin and zucchini to cover your veggie bases, and barely a drop of oil/butter to speak of. Throw in an assortment of therapeutic herbs and spices for good measure, and you’ve got a groovy thing going on. Healthy and exploding with flavour? Oh my. We mustn’t forget the arame. ‘What on earth’s arame?’ you may ask. Good question. Arame is a Japanese sea vegetable (a.k.a seaweed) that is exceptionally high in calcium, iron and iodine, with easily digestible proteins.     • Quinoa Breakfast Bowl

      Anyone who’s spent a decent amount of time with me would know that I’m inclined to have a ‘jittery’ disposition when it comes to certain situations. Competitions, exams, starting something new – and for some strange reason concerts – all get me hyped up on a mixture of nerves and excitement. In the lead up to such events I find it very hard to sit still. I have to be occupied. Kept busy. Doing something. And referably something that feels productive. Saturday morning was a double whammy – a job interview in the morning and netball grand final in the early afternoon. Fortunately, I’ve become much better at channeling all that nervous energy.  I have reached the point in  which I no longer drive anyone near me up the wall. Cooking takes me to my ‘zen’ place, where all that matters is the measuring and mixing. There’s no match points, no tricky questions, no new people. Just me and the recipe. I can get as angry/frustrated as I like at it and it doesn’t matter. In these situations I also like to feel as prepared as possible. That includes providing my body with decent fuel.     • Quinoa Veggie Bake

      I have read countless articles and blog posts in the past few years expounding the marvels of quinoa. It’s been touted as the new super food. A wonder grain. A nutritional powerhouse. At first I was skeptical and wrinkled my nose at the thought of it. Can anything really live up to those kind of standards? It turns out it can. Quinoa is low GI, high in fiber, gluten-free and packed with iron and vitamins B and E. It contains all eight essential amino acids along with lysine (which very few grains have), making it a complete protein source. For a vegetarian (or anyone interested in healthy eating) that fact is kind of like winning the lottery. Oh and it’s extremely versatile. I have had it in soup, salads, patties/burgers, for breakfast and even in muffins. If you are trying it for the first time the texture may seem a bit odd and I have to admit that it did take me a while to get used to (and appreciate) it’s uniqueness. On the plus side it readily takes on the flavour of whatever it is cooked in (be that stock, fruit juice, milk…the options are virtually endless) so it rarely fails in the taste department.
