      We discussed the merits of having one’s own brood of chooks here on Wednesday. Today’s recipe is all about highlighting the most obvious reward. Beautiful, orange yolked free-range eggs and readily available (unless your chook is moody) at that. I couldn’t not prepare some sort of tart/quiche with tip-top eggs sitting in the little wicker basket just waiting to be used. In all honesty this Tomato and Feta Tart with Brown Rice Crust isn’t the optimum egg user within the quiche department. It uses a mere four.       Vegetable Fritters

      I’ll forgive you for jumping to the conclusion that these are vegetable fritters and therefore they must be boring. I’ve come across some simply dreadful creations in the past. Stodgy, rubbery, bland, mushy. No thank you. These fellows are different. Sure, sure there’s still the bog-standard carrot/zucchini combination. Can’t help that – they grate up a treat and there’s almost always a few floating around the refrigerator. But then things start to get a little more funky. A bland vegetable fritter is the pits. It puts vegetarian cooking to shame. We’re going to spice ‘em up with ground cumin, paprika and fennel seeds. We’re going to bypass dreary old plain flour. Exchange it for something with more excitement factor. Something more nutritious. And that, ladies and gents, is besan flour. Continue reading →

      Vegetarian Sheperd’s Pie

      Confession time. Any vegetarian scorners avert your eyes. Though if you’re that way inclined and reading a vegetarian blog I’m a tad confused. Annnyyyway…here goes. There actually are some meat dishes that I miss. That I crave from time to time. Shock. Horror. However it’s not so much the actual meatiness, but usually either the grease (gross, right?) or the memories attached to them. Sometimes both. In this case (and thankfully so) it was the latter that I was pining for.  A meaty memory. On cold wintery days, I would rush home from primary school, often sopping wet (apparently a 10 minute walk is not far enough to warrant a lift home, even on stormy days. Thanks mum and dad.) hoping with all my heart that Sheperd’s pie would be on the menu for tea. I was a sucker for all things potato – still am, though to a far lesser extent – and digging into a bowl of creamy, cheesy mash piled above a rich, hearty, and yes meaty, filling (drenched in tomato ketchup of course – what else do you expect from a ten year old?) was bliss on a grey day.  Continue reading →

      Today’s million dollar question: how many types of gnocchi are there? What’s that? Speak a little louder. Oh, just the potato one? Hmm not quite right. Turns out there’s three. You’ve got Gnocchi Romaine (made from semolina), Gnocchi Parisienne (made from choux pastry) and the aforementioned ‘potato one’ – Gnocchi Piedmontaise. I’ve made the former and latter and could ramble on for a while about the various ins and outs of each one, but a) that would probably send you to sleepy land and b) I want to talk about something else. That something else being this Spinach and Ricotta Gnocchi. I know what you’re going to ask. Please don’t. I haven’t the faintest clue what ‘category’ it fits into. Does the ‘yummy type’ count?     • Squirrel's Quiche

      Squirrel’s Quiche

      This quiche is a family staple, ‘borrowed’ from Squirrel’s Restaurant in the 1980’s. Hence the odd name. There’s certainly no squirrels in it. As of this year it’s a new improved family staple. You see, sometimes tradition requires alteration. Some tweaking here and there. To produce a real winner of a dish. That’s not to say the essence of the quiche has been modified, oh no. That’s been carefully preserved (I would have faced the wrath of certain family members had it not). With the application of a few key culinary techniques (blind baking, anyone?) this quiche has been transformed from decent nosh to a top notch feed. A smooth, light custard is dotted with florets of nutrient packed broccoli, sweet leeks and butternut squash and topped with golden cheddar. The whole thing is encased in a crisp, crumbly whole-wheat crust. A pastry to knock your socks off. The crowning jewel of the Squirrel’s Quiche 2.0 revamp. Continue reading →
