      Peanut Butter Booster Bars

Yet again we’ve had an absence of posts. Do you think I simply need to stop apologising? Cease to spout excuses? It appears as though the trend towards scattered, and for that matter scatty in general, posts is going to become the norm. Hmmm. Bu-ut. Yes, there’s always a but, isn’t there? If one had to justify the severe lack of posts over the past two weeks, it could be attributed to college rowing. An experience that slowly takes over your life, like that obsession with finding the perfect chocolate chip cookie recipe, consuming it bit by bit until you’re eventually reminded by others that there is in fact a world outside of your well insulated bubble. Once the regatta (or if we’re still using the chocolate chip analogy, you find the one) concludes you finally emerge from that all-consuming blanket of ‘rowing life’, like a rabbit blinded by headlights on a dark evening. Stunned. Disorientated.

Rowing involved food, plenty of food (carb-loading, anyone?). Why it even involved baking (homemade muesli bars are a must for any sporting event), yet what it  didn’t allow for was blogging. Continue reading →

      Chocolate Chip Cookies

This is yet another of those recipes you could make with eyes shut. Simple, yet classic. An old favourite, regardless of how old you are. Crispy on the edges, soft, buttery and chewy in the centre and with white, dark and milk chocolate chips…what’s not to like? Chocolate chip cookies are acceptable at any time of day. Truly. The original recipe actually calls for double the amount below, however I find that provides slighhhhtly too much temptation. They’ll disappear pretty quickly, but that’s not really a bad thing is it? Better than downing half a plate in a sitting – why is it that the regret only hits after you’ve lost count? By all means make a double batch and freeze a bag or two. Just remember that you were warned, when you find yourself stealthily (or so you’d like to think) sneaking a few in the middle of the night. I am a terrible, terrible person. You must think I’m unable to keep my word. There may be some truth in that. It’s been over five weeks since I last posted. Five weeks. Sad thing is, I’ve had plenty of ‘back ups’ sitting here, patiently waiting to be used. There’s no excuses to be had. Later this week I’ll delve more into what has been going on, perhaps even try to justify my severe lack of commitment. On second thoughts, don’t hold me to it. Last weekend I knocked together a batch of Oatmeal Raisin Cookies for our residential college’s ‘celebration’ of Earth Hour. Truth be told they weren’t these ones – golly, not only do I go back on my word, I’m hypocritical too. This ain’t putting me in a very good light is it? However, a girl can only work with the ingredients she’s got on hand. Butter wasn’t one of them. Let’s not get too side-tracked though – these are significantly tastier and as stated below (yes it is one of those ‘pre-written ones’) you really do need to go make some. If you can trust me on anything at the moment, it’s that. In the meantime, I’ll get down to preparing a more substantial post for you! Continue reading →

Once upon a time in Shani’s world of cookies there were only two classifications. Moderately wholesome (rolled oats, nuts, dried fruit or honey tended to be defining features) or thoroughly unhealthy. The ‘healthy’ end of the spectrum didn’t exist.  In that world a cookie couldn’t be healthy. It was impossible. Indulgent just didn’t equate with nutritious. What a narrow world it was. Then one day it wasn’t anymore. Turns out it is in fact possible for a cookie to be good for you. Relatively speaking. We can’t be comparing cookies with watermelon – it just wouldn’t be fair for either party. Continue reading →

Things have been just a little busy around here lately. Actually, that’s an understatement. It’s been downright hectic. I’m sure our situation is far from unique. Preparing food for Christmas isn’t for the fainthearted. You’ve gotta have a pretty strong constitution to get through the festive period. The will to keep going when you just.cant.de-bone.another.chicken, or roll out more fruit mince pie pastry, or ice another spice biscuit. The guts to brave the zoo that is small town supermarkets on a Sunday (pretty much the one and only time they’re open on Sunday all year) and to deftly manoeuvre your cart around the other half-crazed, half-desperate shoppers. To have enough sense of dignity to not break-down sobbing in the cheese section because 150g of goat’s cheese is close to an hours wage. And you need more than one packet. It’s a good thing Christmas only comes around once a year. Continue reading →
