      Ahem, this post may or may not have been penned as a ‘back-up’ over the summer. But hey, there are times when that preparation becomes handy dandy. It’s inevitable. Times like now. Fresher or ‘O week’ of University is in full swing and spare minutes, let alone an hour, have been rare. Things’ll go back to normal around here eventually…in the meantime here’s some cake. Cake is good. Right?

      Light, luscious lemon squares. Nothing like getting some good alliteration going. Hey, some people liked English at school. Nothing to be ashamed of. Well, not much. There’s also nothing quite like the perfect mouthful of summer. Sweet as a pea with a refreshing lemony twist, these dainty pale yellow sponge squares are reminiscent of an English garden tea party. Of course if you’re trying to please the more macho personality, simply hack it into big slabs and slather with a double quantity of icing. Nothing elegant about that.       A one pot wonder indeedy is this Peruvian Quinoa Stew. Despite moving into a residential college that provides all of my meals, it felt fitting to salute the realm of ‘student nosh’. A term at Oxford was enough to have me sympathising with the baked spud, beans and cheese crowd. Meals that can be whipped up with minimum fuss yet pack a punch of goodies into you are what we’re after. Hearty, tomatoey and brimming with a variety of vegetables, this baby fits the bill. It’s got your protein and carbs well covered with the quinoa, requiring no ‘extra’ cooking for rice/pasta etc. Admittedly, there’s no truly green veg, however you could easily pop in a few florets of broccoli or some trimmed green beans. If that’s too much effort, simply slop it on top of a bowl of fresh baby spinach leaves. Easy peasy. Think of it as a bumper ‘superfood’ alternative to vegetarian chilli con carne.       Yes, yes I’m a hypocrite. I went back on my word of three weeks ago. The Wednesday waste post was m.i.a this week. Sometimes life – and in this instance, moving cross country continent – gets in the way. This time last week I was happily cruising along. Supremely confident that I’d be able to breeze through the following seven days, gathering the last few bits and bobs together in preparation for jetting off to the University of Melbourne. Hah. Despite numerous lists, a weekly calendar and other such organisational tools this week has been anything but that. Working out the cheapest way to transport belongings (in a country the size of Australia, postage becomes expensive very quickly), changing addresses, fighting with stupid bureaucratic government websites (thank you for ‘losing’ my account, I really appreciate it), and other such matters whilst trying to cram in as much cooking as possible before I leave has resulted in one very brain dead person. A walking zombie. Needless to say any inch of inspiration for yesterday’s waste post was long gone. Continue reading →

      Raising the question “what should I bake?” is a dangerous task at the best of times. It puts one in a particularly perilous position. What if one actually doesn’t want to make what is suggested, and in some cases demanded (I’m looking at you here, little sis)? You’d think I’d have learned by now. Hmph. Not the case. My younger sister’s response is often obscure, vague, or difficult and downright complicated to make. In her world of baked goods time-frames and effort required don’t exist. Dad’s tends to border on predictable, if not repetitive. Old favourites such as Bran Muffins or Zucchini Bread. The Brampton ‘classics’. When I raised the question with S and B mid last week I honestly didn’t know what response to expect. Conventional? Complicated? Kooky? Where does the Italian ‘cake’ Panforte sit?       We discussed the merits of having one’s own brood of chooks here on Wednesday. Today’s recipe is all about highlighting the most obvious reward. Beautiful, orange yolked free-range eggs and readily available (unless your chook is moody) at that. I couldn’t not prepare some sort of tart/quiche with tip-top eggs sitting in the little wicker basket just waiting to be used. In all honesty this Tomato and Feta Tart with Brown Rice Crust isn’t the optimum egg user within the quiche department. It uses a mere four. However, you’ll find four is plenty enough to get your eggy fix. Quality over quantity right? Continue reading →
