      Rosemary & Sultana Soda Bread

      Afraid of baking with yeast? Never fear, soda bread is here! Okay, so that was a totally lame – and not to mention corny – statement. I’m sorry. What I was trying to do is get you to get excited about the concept of soda bread. Why? Anyone can master it, even the most novice of bakers. I promise. Less finicky than scone-dough and certainly less stressful than yeast based breads (because, well, it doesn’t contain yeast), this is definitely one to add to your baking repertoire, no matter how small (or non-existent) it may be. So it may not be quite as easy as a melt-and-mix chocolate cake, however the result is just as pleasing, if not more so. And sure, you can convince yourself that chocolate cake is acceptable for breakfast, lunch and afternoon tea, but whilst that’s nice in theory, in reality it’s not. On the other hand, this Rosemary & Sultana Soda Bread is actually suitable for all three. And is oodles healthier than a slab of cake. Did I mention that it’s scrum-diddly-umptious too? No?     • The Horror Inflicted on Herbs

      HerbsEver rummaged through the refrigerator and discovered an unidentifiable green sludge, oozing strange juices from its plastic bag in the back corner? If you’re lucky you may still be able to identify  it’s origins. A bunch of wilted parsley. Blackened basil. Rosemary stiff enough to poke someone’s eye out. Or the worst – slimy coriander. Welcome to the serial herb killer club (yes, the herb is already ‘dead’ but your still wasting it’s life). These killers are unassuming beings, hovering over the herb section of the supermarket, innocently selecting a bunch of mint and going on their way. Poor mint – it doesn’t know what’s going to hit it. Abandonment and neglect, shoved aside to make way for the tomatoes.  Left to a slow, grisly demise at the very back of the refrigerator. Because that one tablespoon the recipe called for results in a whole lotta left over mint. These people are so reserved, so normal in their actions that unless you’re a reformed serial herb killer yourself, it’s unlikely you’ll spot them. And to be honest no one’s going to arrest you for forgetting about the packet of basil you bought for pizza three weeks ago – what incentive do you have to reform your murderous (i.e. wasteful) ways?     • Hidden Greens Smoothie

      I never thought I would be one to jump on the green smoothie bandwagon. It resided in the realm of healthy-but-too-weird. Sure I’m smitten with banana smoothies, particularly if they contain a dash of nutmeg and cinnamon. Berry smoothies are blissful and the colour alone is enough to brighten ones day. Mango, passionfruit, papaya…all fine with me. But a smoothie that is green and has vegetables in it? I think I’ll pass, thank you very much. I strongly believe that you should never judge a book by its cover, yet the words green and smoothie just don’t correlate in my head. Surely it must be some kind of evil witchy brew? Or at least like the medicine that mum used to force-feed you, extremely good for you but awful all the same. I was positive that green vegetables and smoothies should not exist on the same wavelength. Just no. That was until I chided myself for being a chicken and decided to take the jump. In recent times their popularity has skyrocketed, and that either means that everyone has taken leave of their senses and transformed into green smoothie monsters, or heaven forbid, they actually taste pretty good.       Sometimes things in the kitchen don’t quite turn out as intended. You start with a seemingly credible recipe, measure your ingredients meticulously, pop the mix in the oven and wait patiently  with your fingers and toes crossed.  Surely it will turn out right after all that. Yet, inexplicably, you draw from the oven an item that barely resembles the image on your recipe. “Oh god, is it even edible?” is the first thought that runs through your head. I like to call situations like this ‘divine intervention’, rather than admit that somewhere along the lines I messed up spectacularly. Take Wednesday for example – I followed a new recipe to the tee (an unusual occurrence), confident that in doing so nothing could possibly go wrong. However that faith meant thatI failed to see the warning signs going off in the background. I frowned at the cupcake batter in my bowl and tried to fathom just how I was going to pour it into the muffin tin when it resembled cookie dough. Despite thinking “Huh, I’ve never made cupcakes like this before” and my gut suggesting something was wrong, I ploughed on, resorting to squishing the mixture into the liners with my hands.     • Slow Down: Part 2

      slow signLast week I expressed my joy at watching an elderly gentleman actually take the time to savour his food. I nattered on for a while about how we should all follow suit and eat slower. But I didn’t actually give very good (or scientific for that matter) reasons for doing so. This is where I rectify that. Consider this as ‘slow food ramblings part two’ or ‘why we would be crazy to not slow down at meal times’. After some extensive research (well if previous discussions with naturopaths, personal experience, ‘scientific observations’ of others and twenty minutes on Google yesterday counts as extensive), I’ve drawn up what I believe to be the three ‘main’ benefits or ‘goals’ of slow eating. This excludes reaping enjoyment from what we eat as a) I talked about it for far too long last week (sorry about that) and b) if you work to reap these three benefits, then the enjoyment will should come naturally. Unless you find some warped pleasure in devouring your meal as though it was your first and if that’s the case, I can’t help you. Because what we’re aiming to do is treat it as your last, savour every last mouthful and enjoy the heck out of it. Continue reading →
