      Creamy Cannellini Bean & Vegetable Pies

      Who said that vegetarian food couldn’t be indulgent? It just so happens that many vegetarians choose to prepare and eat healthier options. That’s not so say there aren’t gluttonous opportunities out there. These pies are one of them. You’ve a few key staples of French cooking – wine, cream and rich, buttery pastry. With those three under your belt you really can’t go wrong, unless you decide to throw in some tripe or a pair of smelly old boots (both of which are actually quite comparable). Then you’re quite on your own.

      A long, loooonnnnnng time ago these were Chicken and Vegetable Puff Pastry Parcels. Somehow along the way they’ve morphed into Creamy Cannellini Bean and Vegetable Pies. I can’t help myself. Fortunately in this case the tweaks drastic alterations have paid off. Would you believe it if I said that the vegetarian version is far more scrum-diddly-umptious than the original chicken one?       Beetroot, Avocado & White Bean Grilled Cheese

      Grilled cheese sandwiches. The ultimate comfort food/cold weather food/can’t be bothered making a ‘proper dinner’ food. Let’s be honest. It’s anytime food. Not just for kids – we ‘grown-ups’ can eat them too. It’s perfectly acceptable grub – even for dinner – especially when jazzed up with nutritious extras. In this particular specimen you’ve got cannellini beans for fibre and protein, avocado for healthy fats as well as a kazillion other wellness-boosting nutrients and beetroot to cover your veg bases. Wait a minute, avocado counts as a veg too! Let’s just forget about the slab of cheese wedged in the middle, and the fact that the bread is lathered in butter. Because, hey a little fat never hurt no-one (given that it’s not the major component of the meal). There’s simply no point trying to omit them – you wouldn’t have a grilled cheese sandwich anymore would you? Continue reading →

    • Cannellini Bean Salad

      Lunches at cooking school are a fickle event. You never know when they will be, or if you will be granted a break at all. One day it may be at 10.30am and the next at 2pm. Some days you may be ravenous by 9am, particularly if there’s a class baking bread next door. The smells wafting through are pure torture, I’m telling you. Other days you may be put off food so much that you never want to eat again, have no appetite whatsoever, despite having eaten nothing since 6.30am. You get the picture. Lunches are up, down and all over the place.  What is predictable, however, is that I will always enjoy eating this cannellini bean salad, regardless of the time of day or my state of hunger. It took me a while to realise that salads can actually be, well, exciting. Crazy, I know. I was a pretty good kid and always ate my veg without much cajoling. However, it was always eaten first – quite unceremoniously – and before all of the ‘yummier’ bits. But its not surprising really as iceberg lettuce, chunks of cucumber, wedges of tomato and carrot sticks aren’t all that interesting – to look at or to eat. In my 10 year old brain that’s all a salad was, and all it ever would be. Continue reading →

    • Cauliflower and Cannellini Bean Mornay

      Tuna mornay used to be a favourite winter meal when our family still ate meat. Though to be honest it was the creamy, slightly spiced sauce that won our hearts, not the dish itself. We are complete suckers for anything cheesy, which is probably why not one of us could bring ourselves to become vegan. I have heard some people comment that a vegetarian mornay would pretty much the same as eating macaroni cheese. Well ladies and gents it is not. Far from it in fact. Sure they both have a similar sauce, but the flavours are different.  I wanted to prove this point (I do like to be right, it’s a bad habit, I know) and thus came up with a cauliflower and cannellini bean mornay. Sometimes it pays off to be obstinate as the dish was a real winner. Continue reading →
