      Sorry for the salad spam. Well not really. It’s summer. In Australia. It gets hot. Hot = salad cravings. Big time. However this particular specimen, this Spinach, Pumpkin, Pine Nut, Cannellini Bean Salad with Caramelised Red Onions (whew, that’s a long name!) is suited to all seasons. It can wear the hat (or beanie) of comforting, warm salad just as easily as that of the cool, refreshing one. Think sweet, pungent caramelised onions, chunks of roasted butternut squash (hot or cold), creamy cannellini beans and crisp baby spinach leaves. Toasted pine nuts provide crunch and, well, nuttiness. Whe-hey. Whip this up and you’ve got yourself a fancy schmancy lunch or simple dinner. Pop it in a flatbread/wrap for a snazzy sarnie or serve alongside some quinoa for an extra protein boost. Versatility is our friend. Continue reading →

       As I regularly have to remind my Northern Hemispherean friends, we in the South live a topsy-turvy life. Whilst many people are moving into the months of sunshine, and ice-cream, and refreshing cocktails, we in the South are flicking on that ‘hibernation mode’ switch. I’m currently spending two weeks of my winter break back in Western Australia. It’s rained. And rained. And rained. And then rained some more. It’s cold – enough so that we’re reaching for scarves and beanies and layer after layer of sweaters. Yeah, it’s nothing like a ‘proper’ winter with snow and howling winds (though we do get those from time to time) and below 0C temperatures, but for us it’s still damn wintery. Continue reading →

    • Vegetable Casserole with Cheesy Herb Dumplings

      I’m sorry, this isn’t a pretty dish. But I won’t apologise too much as the flavour more than rectifies that. And as far as I’m concerned, any dish that manages to incorporate scone like substances into it is doing well. Casseroles with dumplings really are a brilliant invention, allowing you to turn a few basic ingredients into a substantial meal. Definitely something to keep in mind if you are on a budget. These dumplings burst with flavour due to Parmesan, wholemeal flour and oodles of herbs and gratifyingly soak up the paprika spiced juices. The rest of the dish is so healthy that it’s impossible to feel guilty eating ‘scones’ for dinner. Each time I make this casserole I wistfully stare at my bowl, hoping that a few more dumplings will suddenly materialise. I then swear that I will double the dumpling mix next time. And promptly forget to when the time rolls around.  I haven’t doubled the mix in the recipe below (at the moment it makes one medium sized dumpling per person) but if you are anything like me and have a penchant for scones I would advise doing so!
