      Dark Chocolate Orange Coconut Cookies

      I haven’t had much time to cook, nor felt like it (what is the world coming to?!) over the past few days. Apart from the one exception (sublime homemade spinach and ricotta gnocchi in a pine nut and browned butter sauce – I’ll make it again just for you soon, promise!) meals have largely consisted of basic salads or poached eggs on veg. Despite the general abnormal behaviour in regards to cooking, I haven’t been able to resist a little baking. In fact, before I left small-town Western Australia in June last year, baking comprised the majority of my time spent cooking. My repertoire was far simpler than it is today so it only felt ‘proper’ to revisit one of the old favourites. These Dark Chocolate Orange Coconut Cookies used to be my ‘sophisticated’ biscuits.       Soft Chewy Quinoa Oat Bars

      These Quinoa Oat Bars are deceptive. They appear to be super healthy, an all-round nutritious snack bar. That’s not to say they aren’t (well relatively speaking) however they’re much more than that. How so? You could just as happily snaffle one of these up for dessert with a dollop of creamy yoghurt or vanilla ice-cream, as you would chow into one for a post-workout snack or breakfast on the run. This ‘fancy schmancy’ muesli bar is luxuriously chewy with a subtle sweetness (be warned sugar fiends, this may not be the one for you). When toasted the quinoa, apart from instantly elevating the street cred of these bars (why, it even makes them sound virtuous and healthy), lends itself to a sublime nuttiness. Throw in a handful of a trio Christmas coloured goodies – pistachios, dried cranberries and white chocolate – and you’ve got a groovy thing going on. Continue reading →

      I think by now we’ve established that indulgence is perfectly fine, even necessary, as long as it adheres to the golden rule of moderation. How boring would life be without chocolate, or cookies or sweets or, gasp, peanut butter? I don’t even want to think about it. However, there’s no denying that finding a balance can be difficult. I don’t know about you but there’s been many a time when I’ve wandered into the kitchen for one cookie/square of chocolate/spoonful of peanut butter (please tell me I’m not alone on this one folks) and  overstayed my welcome. A while later I emerge cursing that I even I entered the kitchen, and vowing that next time I’ll have a stronger resolve. The whole “I’ll just have a little more”…”and a little more” ends up being an “oh heck, I’m here I’m might as well go the full hog”. So what if I told you there was a solution? And, even better, one that involves chocolate and cookies and sweets and, wait for it, peanut butter? Now we’re talking. Continue reading →

      Vegan Carrot Walnut Cookies

      My last foray into baking vegan cookies was met by the comment “they taste vegan”. Well, duh. Yet the inflection suggested that by making them vegan, I was committing a crime against cookies. According to this ‘higher power’ vegan is the witchiepoo of the baking realm. It was clear that any future sorties with vegan baking would be met with significant apprehension and – most probably – displeasure.  That’s a pretty negative and narrow perspective don’t you think? I must admit the cookies in question were quite horrid – I only ate them in a stubborn attempt to pretend that my cooking surely couldn’t produce anything that bad. I should have swallowed my pride and saved my taste buds from some unnecessary torture. Despite that first abortive attempt at vegan baking, I remained unperturbed. Just because one recipe was a shocker, didn’t mean that they all would be. Right? And they couldn’t be any more horrid than cookies that tasted like concrete. Well, I sincerely hoped not.       I have very fond memories of sitting on my aunt’s kitchen bench at the age of four or five, anticipating the moment at which I would be allowed to make the thumb print that gives these biscuits their name. I felt so grown-up being allowed to ‘cook’ and it was always an exciting and satisfying day out.  My hands are pretty small even now, so back then my thumbs would have been tiny. I have never asked my aunt…perhaps I fear the answer will burst my childhood pride…but it is likely that she went along and make larger indentations once I was distracted with something else. Otherwise there would have been very little jam in the biscuits! It just goes to show that the size of the indentation can vary significantly depending on the size of your thumb. There’s no need to take the name literally – use any finger you like, or make a double indentation like I do, depending on how much jam you want. Continue reading →
