    • Vegetarian Taquitos

      I’m kind of surprised that these taquitos didn’t end up a complete dog’s breakfast. You see, yesterday my brain took a holiday from cooking mode. A rare occasion, I’m telling you. Gawd, most of my dreams are about food and nightmares involve someone stealing my baking equipment. Lame, I know. So weirdness aside, without my permission my brain decided to take leave of all basic cooking instincts. First, I spattered chunks of frozen berry all over myself when making a smoothie for breakfast. Who knew that you needed liquid to puree hard ingredients in a hand blender? Well I actually did know that. Unfortunately my wits were on sabbatical. I guess it did serve as good but messy reminder. Secondly, I almost killed off the yeast in my Chelsea Buns. Someone thought it would be a good idea to reduce electricity usage and prove the dough in the sun, rather than in a very low oven. That someone then became so absorbed in her university research that she failed to see that the sun had moved and the dough was sitting in the shade. Thirty minutes later that same someone emerged from the computer screen to discover that the dough had not risen and was quite, quite cold. Cue cursing. Luckily the yeast valiantly decided to hold in there and the dough proved fine once I reverted back to the more ‘conventional’ method. The buns were slightly heavier than usual but still super tasty, which was a relief. After that episode I was rather apprehensive about cooking dinner – who knew what stupid thing I would do next?     • Fragrant Mushroom & Chickpea Burgers

      If you asked me what I miss about meat you would receive a very long and convoluted answer. It’s quite likely that the explanation would leave you more baffled than you were to begin with. I have the unfortunate tendency to take after my mother and provide long-winded stories that leave the listener looking slightly vacant with a dazed expression and glazed over eyes. Most of the time this ‘habit’ is because I want to completely clarify a point, yet in doing so I provide far too much, and often irrelevant, information. This post is an attempt to practice ‘taming’ this deplorable trait.

      Here are three things you should know about meat and I. Fact number one: I very rarely miss meat. Fact number two: Often it isn’t the meat itself that I miss but certain components that usually accompany it – grease, protein and pastry/bread. Fact number three: It’s the memories attached to particular meat dishes that are most enticing, not the food itself. Ninety-nine percent of the time fact number one overrides the other two  – why would I want to eat meat when there is an infinite number of tasty and nutritional vegetarian meals to savour instead?       I’m of the opinion that every household should have at least one never-fail bog-standard one-pot-wonder recipe kept up their sleeve. Preferably one that can be made in industrial sized quantities and frozen – just for those nights when all you want to do is collapse on the couch and never move again. Of course, take-away might appear to be the more obvious solution in these circumstances, but unless you pay for delivery that option involves going somewhere and at the very least calling up to place your order. Though nowadays more and more places are offering ‘order online’ options, so technically in some cases you don’t even have to call up. I’m still trying to wrap my head around that. Heck, until I was eleven we lived in a country town so small that there was no takeaway option. Frozen pizza singles were as exciting as it got. Continue reading →

    • Quinoa Veggie Bake

      I have read countless articles and blog posts in the past few years expounding the marvels of quinoa. It’s been touted as the new super food. A wonder grain. A nutritional powerhouse. At first I was skeptical and wrinkled my nose at the thought of it. Can anything really live up to those kind of standards? It turns out it can. Quinoa is low GI, high in fiber, gluten-free and packed with iron and vitamins B and E. It contains all eight essential amino acids along with lysine (which very few grains have), making it a complete protein source. For a vegetarian (or anyone interested in healthy eating) that fact is kind of like winning the lottery. Oh and it’s extremely versatile. I have had it in soup, salads, patties/burgers, for breakfast and even in muffins. If you are trying it for the first time the texture may seem a bit odd and I have to admit that it did take me a while to get used to (and appreciate) it’s uniqueness. On the plus side it readily takes on the flavour of whatever it is cooked in (be that stock, fruit juice, milk…the options are virtually endless) so it rarely fails in the taste department.     • North African Pumpkin and Chickpea Stew

      A word of warning about this stew. Do not, and I repeat do not, put the pot in the middle of the kitchen table whilst you are having dinner. If you do, you will sit there for hours slowly consuming its contents. This is addictive stuff. I made that mistake the other night and it took a lot of willpower to get up and put the leftovers in the fridge. Even then I couldn’t help sneaking an extra few mouthfuls. In the end I guess it isn’t too serious a crime if you eat more than you really should – it’s healthy to a tee. The kind of dish that makes you ‘glow’ afterwards. Continue reading →
