      Today is one of those days that makes you want to leap around like a baby deer in spring. Why? Because it feels like spring! That’s not stating the obvious too much is it? Now, I know it is only mid July so technically we are only halfway through winter. I probably shouldn’t get too  eager should I? The thing is, it’s kind of hard not to feel joyous when the sun is shining and it’s currently 23.3C (yes I’m a weather nerd). It’s the kind of weather that calls for sitting in the garden and sunning your legs. Is really sad that I’m ecstatic to be wearing a skirt again? After spending the last week with a terrible head cold and sounding like Janice from Friends I feel as though a healthy ‘glow’ is in order. A little vitamin D to help keep future colds at bay.     • Deconstructed Apple Pie

      It’s a Saturday night and I’m standing in the kitchen staring at two pitiful Fugi apples and some short pastry off cuts. You would think I had more exciting things to do, but no. Most of the time this is as thrilling as it gets. Regardless, I was determined to do something productive with my evening.

      I had made mini quiches for lunch earlier in the day, resulting in the left over pastry. Usually I will roll the leftovers together and make a few more quiches which always end up a bit chewier due to the pastry shrinking  (you should let the pastry rest for 30 minutes after re-rolling but I always get too impatient. On this occasion I had run out of egg mix so more quiches were out of the question – I was too lazy to make more egg mix –  but didn’t want to just throw the pastry out.  Consequently it was shoved in the fridge labelled “deal with later”.     • Cauliflower and Cannellini Bean Mornay

      Tuna mornay used to be a favourite winter meal when our family still ate meat. Though to be honest it was the creamy, slightly spiced sauce that won our hearts, not the dish itself. We are complete suckers for anything cheesy, which is probably why not one of us could bring ourselves to become vegan. I have heard some people comment that a vegetarian mornay would pretty much the same as eating macaroni cheese. Well ladies and gents it is not. Far from it in fact. Sure they both have a similar sauce, but the flavours are different.  I wanted to prove this point (I do like to be right, it’s a bad habit, I know) and thus came up with a cauliflower and cannellini bean mornay. Sometimes it pays off to be obstinate as the dish was a real winner. Continue reading →

    • Baked Apples

      Would you believe I had never eaten a baked apple until a few weeks ago? Well perhaps you would – after all we don’t know each other that well yet. Hopefully that will change in due course! Anyway, I was shocked to realise that I hadn’t. Come peak apple season our kitchen is brimming with apples waiting to be incorporated into scrumptious dishes. Apple crumble is a don’t-mess-with-me tradition in our family and I cannot remember a year that we haven’t made at least half a dozen batches of stewed apples. The look of pure horror on a friend’s face when she discovered me stewing apples a number of years ago was priceless. Apparently normal fifteen year olds don’t do that sort of thing, or at least not for kicks. Continue reading →

    • Mediterranean Green Lentil Salad

      I have a new found obsession with putting green lentils in salad. It started about two weeks ago when I was trying to work out a way to incorporate more substantial amounts protein into main meals, without having to always put it in the ‘central’ dish. Some meals just shouldn’t have legumes/beans/tofu etc. added to them. My sister seems to disagree but honestly could you imagine cubes of tofu stirred through a creamy mushroom fettuccine? Actually, don’t. I just did and it wasn’t pleasant. That’s where lentil salads come into play. Continue reading →
