      Fennel, Rocket & Puy Lentil Salad

      The mantra that green equals goodness is something that still sticks, particularly after all those years of having it drilled into me as a kid. I still tend to get nervous that someone will reprimand me if I don’t eat some sort of green veg for lunch or dinner. This salad eliminates any sort of fear that I’m not receiving a sufficient amount of ‘green goodness’. Light, crisp and tangy with creamy slivers of avocado, it is a suitable accompaniment to a slice of quiche or pie as it cuts through the richness. Paired with a slice of crusty bread it is a wonderful lunch in it’s own right. The lentils provide protein, ensuring that it will keep you nice and full for hours after. You can easily jazz it up with some cucumber, yellow capsicum, toasted pepitas or lightly steamed broccoli…almost anything really. Continue reading →

      Okay. Right. Here goes. *Deep breath in* I feel that it is time to spill the beans on one of my not-so endearing traits. I am a perfectionist. And not just any bog-standard perfectionist. I am on the extreme end of the spectrum. The end that leads to slightly lunatic break downs when things don’t turn out, well for lack of a better word, perfectly. Strangely, it was something I used to be proud of. Until I realised how much it was controlling my life. But hey, this post isn’t meant to be a miserable one – just a warning to anyone who is guilty of the trait themselves, don’t let it consume you. It’s not fun.

      Now that I am learning to control urges such as studying frenetically from the point of getting out of bed in the morning to getting back in in the evening (sad, I know), it is actually quite funny to look back on seemingly ‘disastrous’ situations and my reactions to them.       There is something innately enchanting about a bright, crisp morning. I have discovered both to my joy and horror that during winter the sun shines directly through my bedroom window in the early morning. Some days I just grumble and pile a mound of pillows over my head to block the sunlight out. However, most mornings (when it actually is sunny) I find it to be a wonderful incentive to leap out of bed and embrace the day. Today was one of those mornings, one where you can’t help but feel happy. Rather than going for a run as I usually do before breakfast, I opted to rug up and head out for a short stroll (such a peaceful word, isn’t it?). The combination of bright blue skies, frosty green grass and the bone-numbing cold – well 5C is cold by Sydney standards – creates an almost ethereal atmosphere. That’s if you are able to ignore the streams of cars going by and the sounds of early morning construction work! It seems as though many of my most precious memories are of these kinds of mornings – running past the college rowers on the Thames in Oxford, an early morning walk in the Snowy Mountains on a family holiday and so on. Consequently I take on the persona of an elderly person, reminiscing about this and that until someone eventually tells me to shut up. Continue reading →

      Exams. At times it feels as though the past few years have solely consisted of a never-ending stream of assignments, tests, essays, and more recently, practical assessments. Perhaps I’m over exaggerating a lot tad, I mean I only spent eight weeks at uni. Though to be fair that period involved at least one 2000 word essay per week, and often more. I’m one of those people who, when an assessment is looming, goes into crazy-lunatic-overdrive mode. Am I a little obsessive? Yeah. Not something I’m proud of but I’m slowly learning to tone things down a bit. Largely because such behaviour results in stress. A lot of stress. And for me, stress equals IBS, which leads to more stress, leading to even worse IBS…you get the idea.

      So with a six hour practical exam looming tomorrow morning, followed by two theory tests in the afternoon and another six hour practical on Friday, I have been trying my best to keep the stress at bay. I have recently taken up meditation classes, but there are times when you need to do something that requires a little less, well, concentration. Continue reading →

      Sometimes all you feel like is a simple dinner. No complex flavours, just good heart-warming food. Something that feels like an indulgence but is actually quite healthy. One that produces left overs – an easy lunch the next day, tasty hot or cold. This roasted butternut squash with spiced chickpeas does all of the above and is super versatile – I have made it in summer and plonked it on a plate with a colourful salad, and in winter it goes beautifully with roasted brussel sprouts and cauliflower.
