      Would you believe it’s been a gloriously sunny today? That’s right, actual sunshine. Not warm, but sun all the same. Blue skies. A light breeze (though, wearing a flippy skirt was not a wise move)…all that jazz. Considering it’s first day back at university, it’s nice to have some brightness in the world. Lectures…what were those again? In all honesty it’s good to slide back into days that have some form of structure. Days, that no longer meld effortlessly into the next, into one big blob of ‘what did I even do/accomplish in that time?’. Deadlines aren’t all that bad. Truly. To celebrate the impromptu burst of spring weather – there are even, shockingly, yellow daffodils blooming in the grounds – we’ve got a light refreshing meal on the cards. ‘Vegetable and Tofu Bowl’ may sound less than appetising, but trust me on this one.       Splurged on sweets/fatty foods over the weekend? In need of a health kick? Something to ‘reset’ your batteries? Look no further than these Millet and Quinoa Balls. There’s not a bad bone in them. These saint-like morsels contain a triple threat of protein with not one but two ancient grains in the form of quinoa and millet, as well as yellow moong dahl (substitute with yellow split peas if necessary). There’s shiitake mushrooms, pumpkin and zucchini to cover your veggie bases, and barely a drop of oil/butter to speak of. Throw in an assortment of therapeutic herbs and spices for good measure, and you’ve got a groovy thing going on. Healthy and exploding with flavour? Oh my. We mustn’t forget the arame. ‘What on earth’s arame?’ you may ask. Good question. Arame is a Japanese sea vegetable (a.k.a seaweed) that is exceptionally high in calcium, iron and iodine, with easily digestible proteins.       Vegan Carrot Walnut Cookies

      My last foray into baking vegan cookies was met by the comment “they taste vegan”. Well, duh. Yet the inflection suggested that by making them vegan, I was committing a crime against cookies. According to this ‘higher power’ vegan is the witchiepoo of the baking realm. It was clear that any future sorties with vegan baking would be met with significant apprehension and – most probably – displeasure.  That’s a pretty negative and narrow perspective don’t you think? I must admit the cookies in question were quite horrid – I only ate them in a stubborn attempt to pretend that my cooking surely couldn’t produce anything that bad. I should have swallowed my pride and saved my taste buds from some unnecessary torture. Despite that first abortive attempt at vegan baking, I remained unperturbed. Just because one recipe was a shocker, didn’t mean that they all would be. Right? And they couldn’t be any more horrid than cookies that tasted like concrete. Well, I sincerely hoped not.
