      My grandmother is one of my ultimate cooking heroes. She’s up there with Hugh Fearnley-Whittingstall and Rachel Khoo. I cherish the memories of being a wee lass and sitting on the counter/kneeling on a chair/standing on tiptoes at the counter/wearing the new apron that we sewed (confession: I still wear it) helping her shape biscuits, sift dry ingredients, cream butter and sugar, and eventually doing the whole thing myself. Never pushy, never impatient, ever happy to answer the many mundane ‘why granny, why?’ questions, she was – and still is – the ideal culinary instructor. She’s been making these cheese scones for yonks, and for a person who isn’t the biggest fan of savoury scones these sure do okay.       I think it would be accurate to say that I can be a twit at times. It appears that not even attending the University of Oxford prevents one suffering from the affliction of ‘donkey brain’.  The baking of this Chocolate Beetroot Bundt Cake witnessed one such pea-brain episode. The sad thing is, it’s not even a hard cake to make. Practically an all-in-one. The hardest thing is preparing the bundt tin. Knowing that you’re meant to stir the chocolate chips in before the cake goes into the oven is kind of expected. Remembering that after the cake has been in the oven for five minutes is not part of the recipe. Uttering a series of expletives, pulling the cake frantically back out of the oven (my pastry teachers would have a heart attack if they witnessed that) and pushing the chocolate chips into the top of the partially risen, hot, soft batter certainly isn’t. Fortunately, this episode of Shani-is-a-bimbo wasn’t terminal. I’m pleased to announce that the cake turned out a-okay. You can’t say this Chocolate Beetroot Bundt Cake hasn’t been adequately tested for fool-proof-ness – it was tested by the fool herself. Continue reading →

      Before the summer is out be sure to make the most of the bounty of vegetables available, and in particular zucchini. Zucchinis/courgettes/whatever you like to call them, are a brilliant vegetable. Baked, fried, souped, grated into muffins or cake, there’s endless opportunities. This recipe was inspired by the Green Kitchen Stories cookbook, a must buy for any vegetarian or ethically/health conscious eater. A lighter version of your traditional parmigiana, it’s an ideal meal for a warm weekend evening. Why the weekend? Well, there’s quite a process involved, but if you complete the tasks in stages it really feels like no hassle at all. The perfect recipe for those who like to potter about, doing a little here, a little there. You’ll be duly rewarded for your efforts, with a stunning dish – layers of sweet, fragrant tomato sauce, thin strips of zucchini, boiled egg, creamy mozzarella, punchy parmesan, fresh basil and mint leaves.       Christmas is well and truly in the past by now, so please forgive me for bringing it up again. It’s with a mixture of sadness (there’s no longer an excuse to stuff your gob with as much tasty food as is humanely possible) and relief (no more crazed planning for another 9 months, hurrah!) that I do so. As far as share-house fridges go, ours is pretty darn good. There’s only been one case of a slimy, mouldy lettuce being extracted from the depths of the crisper. There’s been zilch smelly, green-tinged meat pushed to the back of the bottom shelf for someone else to deal with. No milk leaks or fuzzy, half eaten avocados. We’re doing pretty darn well. However, a few weeks ago we did uncover the left over fruit mince from these beauties, hidden (or squirreled away) behind the yoghurt tubs and various cheeses – yes mam we’ve got feta, chevre, parmesan and tasty cheddar (albeit the cheddar is the nasty shredded homebrand stuff, but let’s just skim over that). Typical share house says who? Boasting aside, the fruit mince was a glorious discovery and still in perfect nick. The crucial question was, what to do with it? Continue reading →

      Sorry for the salad spam. Well not really. It’s summer. In Australia. It gets hot. Hot = salad cravings. Big time. However this particular specimen, this Spinach, Pumpkin, Pine Nut, Cannellini Bean Salad with Caramelised Red Onions (whew, that’s a long name!) is suited to all seasons. It can wear the hat (or beanie) of comforting, warm salad just as easily as that of the cool, refreshing one. Think sweet, pungent caramelised onions, chunks of roasted butternut squash (hot or cold), creamy cannellini beans and crisp baby spinach leaves. Toasted pine nuts provide crunch and, well, nuttiness. Whe-hey. Whip this up and you’ve got yourself a fancy schmancy lunch or simple dinner. Pop it in a flatbread/wrap for a snazzy sarnie or serve alongside some quinoa for an extra protein boost. Versatility is our friend. Continue reading →
