      *Note: I actually penned this post waaaaaayyyy back in July, however with the small matter of moving across the country I’ve neither had the time nor energy to cook/photograph/write. Fortunately this recipe actually relates to the past few days. It’s been extremely confusing returning to small town Western Australia after 18 months away and what with the jet-lag and general moving related exhaustion the only thing I particularly feel like doing is face-planting into a big slice of warm, buttered banana bread.       Feta Scrambled Eggs

      Scrambled eggs are purported to be a walk in the park to make. I beg to differ. At least if you want them ‘just so’. Things become even more perilous when you’re cooking for others. Its common knowledge that scrambled eggs are very much subject to personal opinion. Absolutely eeeeveryone has a different view on what constitutes the perfect scrambled egg. Take my sister. She likes hers on the murdered side – dried out to the bone and stirred so much that they resemble an unfortunate creature that’s been dashed against the pavement. The poor old frying pan has to undergo major reconstructive surgery after she’s finished with it. I on the other hand am impartial to the light, soft and fluffy kind. The kind that’s stirred (well in this case folded is a more accurate term) infrequently to produce large pillows of rich, yellow goodness. Contrary to my sister, my kinda eggs must be moist, but with no trace of runniness or remnants of raw egg. It’s a fine line, I’m telling you. Continue reading →

      Listen up and listen well my friends: this Mushroom and Zucchini Strata must chill overnight. Or at for at least five hours. Why? I’ll get to that later. I simply felt obliged to point this fact out to you now, rather than just before you cheerily go to put it in the oven. Discovering that what you had prepared for tonight’s dinner is now destined for tomorrow night will wipe that happy “I’m all prepared” smile right off your face. Been there, done that. And that is why I’m covering my back by giving you fair warning straight from the start. Two words: plan ahead. Hang on a sec, I can see you’re about to skip to another recipe. I understand – I do that too. Please stay. Planning ahead isn’t a drag (well at least not all the time), it’s actually very useful. Planning prevents situations where you’re frantically searching the net for a quick, tasty recipe to cook. Right. Now.  It’s much nicer to still spend more time than you really should looking for recipes (because if you’re anything like me it’s an addiction), but with no sense of immediacy. And all the chill-time induced waiting will only whet your appetite for this strata even more. It’s lip-smacking good. Shall I explain why you have to wait so darned long for it? Sounds like a plan.       Afraid of baking with yeast? Never fear, soda bread is here! Okay, so that was a totally lame – and not to mention corny – statement. I’m sorry. What I was trying to do is get you to get excited about the concept of soda bread. Why? Anyone can master it, even the most novice of bakers. I promise. Less finicky than scone-dough and certainly less stressful than yeast based breads (because, well, it doesn’t contain yeast), this is definitely one to add to your baking repertoire, no matter how small (or non-existent) it may be. So it may not be quite as easy as a melt-and-mix chocolate cake, however the result is just as pleasing, if not more so. And sure, you can convince yourself that chocolate cake is acceptable for breakfast, lunch and afternoon tea, but whilst that’s nice in theory, in reality it’s not. On the other hand, this Rosemary & Sultana Soda Bread is actually suitable for all three. And is oodles healthier than a slab of cake. Did I mention that it’s scrum-diddly-umptious too? No?       Vegan Carrot Walnut Cookies

      My last foray into baking vegan cookies was met by the comment “they taste vegan”. Well, duh. Yet the inflection suggested that by making them vegan, I was committing a crime against cookies. According to this ‘higher power’ vegan is the witchiepoo of the baking realm. It was clear that any future sorties with vegan baking would be met with significant apprehension and – most probably – displeasure.  That’s a pretty negative and narrow perspective don’t you think? I must admit the cookies in question were quite horrid – I only ate them in a stubborn attempt to pretend that my cooking surely couldn’t produce anything that bad. I should have swallowed my pride and saved my taste buds from some unnecessary torture. Despite that first abortive attempt at vegan baking, I remained unperturbed. Just because one recipe was a shocker, didn’t mean that they all would be. Right? And they couldn’t be any more horrid than cookies that tasted like concrete. Well, I sincerely hoped not.
