      Bran is a super food, no doubt about it. Rich in fibre, protein, omega acids and a score of minerals, it is an ingredient I have been trying to incorporate into my baking more often. It also possesses a natural sweetness – an added bonus when it means you are able to reduce the amount of sugar. I was a little sceptical of these muffins due to how little sugar they contained and was pleasantly surprised to be proved wrong. In fact I was astounded.     • Sweet-Corn Fritter Stack

      These past two weeks I have been doing work experience at a café in Newtown. I chose Gather on the Green due to its sustainable and organic ethos. Additionally, their menu has an array of good quality vegetarian meals. I had a wonderful time there and learnt many tricks of the trade, one being to work efficiently in a very small space! Additionally, I was able to pick up a few vegetarian ideas to try at home.

      One of my more regular tasks was to prepare an industrial sized batch of corn fritters and then cook them off. A very hot and sweaty job, resulting in hands that are now far hardier towards hot frypan handles than before. Despite it being a slightly painful job at times it was well worth it. The fritters were layered with wilted spinach, slabs of grilled haloumi and Gather’s homemade tomato relish. Apart from looking very effective on the plate, they were pretty popular and I knew that I had to try them at home. Continue reading →

    • Penne with Onion and Tomato Jam

      If you are searching for a twist on the standard pasta+tomato sauce combination then it’s your lucky day. Behold Penne (or any pasta really) with Tomato and Onion Jam! Otherwise known as sophistication in a bowl. The thick, rich yet zesty jam clings to the pasta impeccably, eliminating the potential for any irritating runny sauce left in the bowl. You will be able to mop up every last bit of it with the pasta, ensuring that none goes to waste. In saying that, penne is ideal as it has ridges that hold the sauce well and has slanted ends that are designed to ‘scoop’ it up. Continue reading →

    • Gingered Pumpkin and Red Lentil Soup

      Soup, soup, soup. Perhaps one of the greatest food inventions ever in my book. It removes the chill from one’s bones on cold wintery days and is wondrous at replenishing depleted energy stores. Feeling lethargic? A bowl of piping hot, peppery soup is sure to add a spring to your step. It is relatively difficult to go wrong with soup – chuck in a few vegies, some protein if you wish and a whole heap of veggie stock and leave it bubbling away on the stove whilst you read, blob in front of the telly (or like me do the housework, a far less interesting option). Blended soups perhaps give you even more leeway for ‘slight mishaps’ as everything is pureed to within an inch of it’s life at the end, so it really doesn’t matter if you overcook it/don’t cut everything precisely!     • Fruity Pinwheel Scones

      I awoke on Saturday morning with a sinking feeling. It was cold, it was raining, it was grey. Usually I enjoy this kind of weather, as it is impossible to feel guilty staying holed up inside baking when it is so miserable out. However, Saturdays mean netball. Netball that takes place outdoors. To say the least I did not particularly feel like running around a slippery court, with hair pasted to my forehead, trying to not to jar my icy fingers on the ball. Does it sound like I have done numerous times in the past? Not fun.

      Thankfully, by the time midday rolled around all games had been cancelled. So what better while away the wintery afternoon with than  baking? I was in a ‘old-fashioned’ mood – I donned my headscarf and wished I had fifties housewife dress to dance around the kitchen in. I really must buy one, just for those kind of days. Scones were most definitely in order. And only the best kind would do – light and fluffy with crispy golden brown edges. Rather than settling for a standard round fruit scone (because fruit makes it seem so much healthier), I decided to jazz things up. Continue reading →
