      Some things in life we can guarantee. Amidst all that uncertainty, those big questions in life – is it going to be warm or cold today? (in Melbourne you can never be sure) do those jeans actually look good on me? (might as well admit we’re all a little superficial at times) do I want cereal or toast for breakfast? (such a dilemma) – there is one thing you can be sure of. With 100% certainty. What’s that, you ask? Why, that you won’t miss the lamb mince one bit in this Vegetarian Moussaka. Even if you’re a dead set carnivore. Kidney beans cover your back in the protein department and meld effortlessly with the rich tomato sauce. Cinnamon works it’s thang, transforming a typical tomato sauce into something inherently Greek…a spice not just reserved for the sweeter side of cooking! Soft slices of potato and sautéed eggplant sandwich everything together, with a creamy cheese sauce seeping through the gaps. A decent scattering of cheese – yes more cheese – produce a decadent melty, golden brown topping, that bit you save for last (or eat first if you’re one of those people). You draw the dish from the oven, hot and bubbling, it’s rich aroma permeates through the air…. Continue reading →

      I gain an immense amount of satisfaction from creating healthier versions of much loved recipes.  A nutritional makeover. At times I fret over how just happy I become when the transformation is successful. Too happy. Regardless, you can’t deny that being able to eat favourite ‘unhealthy’ dishes more often (because, they’ve been, well, ‘healthified’) is cause for some celebration. The major downside of some ‘healthed-up’ versions is that they are often inaccessible or unappealing to many home cooks, either due to obscure ingredients or lengthy preparation practices. However, you need not be wary of this particular recipe – it’s not overtly brazen at all. Sweet, juicy roasted tomatoes, creamy pesto and whole-wheat pasta..why it’s virtually a simple weeknight meal! Continue reading →

      We’ve had some classic Autumn weather this week. Slap-in-your-face cold mornings that slowly give way to brisk yet bright days. The sunlight dapples through the trees, highlighting the changes in leaf colour – from green to yellow to almost red (it’s still a little early yet for the ‘proper’ Autumn shades). This area of Melbourne is blessed with many large, ancient (well I like to think they are) deciduous trees. No, they aren’t native, yet you can’t help but think that if they’re already there why shouldn’t we admire their splendour? Such days call for a bowl of piping hot soup, so warm that it fogs up your glasses (if you so happen to wear them) when you raise the spoon to your lips. Prior to a trip to Edinburgh (in August 2012, to be exact) I avoided mushroom soup like the plague. I mean mushrooms are fantastic, no doubt about it, but mushroom soup? No thank you, mister.       How was your Easter? Overload on chocolate? Lose all sense of self restraint and eat far too many Hot Cross Buns? Have you yet reached the point at which you blanch at the thought of anything remotely egg/bunny shaped? I know I certainly have. When you do, it’s good to hit the refresh button. Do what you need to do to get back on track. Freeze any left-over (yeah, fat chance, I know) hot cross buns, pass the remaining chocolate on to someone else so that they can hide it from you and make a darn good salad to revitalize those taste buds… Continue reading →

      A one pot wonder indeedy is this Peruvian Quinoa Stew. Despite moving into a residential college that provides all of my meals, it felt fitting to salute the realm of ‘student nosh’. A term at Oxford was enough to have me sympathising with the baked spud, beans and cheese crowd. Meals that can be whipped up with minimum fuss yet pack a punch of goodies into you are what we’re after. Hearty, tomatoey and brimming with a variety of vegetables, this baby fits the bill. It’s got your protein and carbs well covered with the quinoa, requiring no ‘extra’ cooking for rice/pasta etc. Admittedly, there’s no truly green veg, however you could easily pop in a few florets of broccoli or some trimmed green beans. If that’s too much effort, simply slop it on top of a bowl of fresh baby spinach leaves. Easy peasy. Think of it as a bumper ‘superfood’ alternative to vegetarian chilli con carne.
