      This Apple Sultana Loaf was not intended to embody the Taste Without Waste philosophy in a literal sense. Oh no. It had rather been assigned to the other major position of relatively-healthy-but-still-super-tasty recipe. After an unexpected turn of events it’s now also taken on the role of recipe-that-can-use-up-ingredients-that-really-shouldn’t-be-used. Taste Without Waste on two fronts…we’re doing well today aren’t we? How did we happen upon this double whammy? For the past week I’ve been staying at a family friends house and one afternoon decided to bake this loaf. After rummaging through their dried fruit stores I could not see no hide nor hair of sultanas. There was however two packets of mixed dried fruit. Why, I could just pick the sultanas out! Problem solved. Better than making a trip down to the supermarket and back, right? Hmmm. After opening the first packet (which had already been opened at some point) I wasn’t so sure. The stuff was practically fossilised. Dry and crystallized to say the least. The best before date? November 2010. Continue reading →

      First recipe post for 2013 2014! We’ll get there with the date change. It usually clicks in around March. Anywho, how are those goals (we’re not calling them resolutions, remember) going? Wavering on any yet? I surely hope not. Just when you thought you were done with all that New Year philosophical rah-rah, here’s a few more lifestyle changes to consider. With the help of these Apple Pecan Cinnamon Rolls of course. If you’ve already got the following ‘ideals’ down pat, good for you. We’ll let you keep that smug grin. For the moment, anyway. Give it a few hours and it’ll be replaced with one of blissed out happiness. Light and fluffy with a sweet, nutty filling. Drizzled with an oozy, sticky maple topping. Don’t say I didn’t warn you about the side effects.       *Note: I actually penned this post waaaaaayyyy back in July, however with the small matter of moving across the country I’ve neither had the time nor energy to cook/photograph/write. Fortunately this recipe actually relates to the past few days.       Afraid of baking with yeast? Never fear, soda bread is here! Okay, so that was a totally lame – and not to mention corny – statement. I’m sorry. What I was trying to do is get you to get excited about the concept of soda bread. Why? Anyone can master it, even the most novice of bakers. I promise. Less finicky than scone-dough and certainly less stressful than yeast based breads (because, well, it doesn’t contain yeast), this is definitely one to add to your baking repertoire, no matter how small (or non-existent) it may be. So it may not be quite as easy as a melt-and-mix chocolate cake, however the result is just as pleasing, if not more so. And sure, you can convince yourself that chocolate cake is acceptable for breakfast, lunch and afternoon tea, but whilst that’s nice in theory, in reality it’s not. On the other hand, this Rosemary & Sultana Soda Bread is actually suitable for all three. And is oodles healthier than a slab of cake. Did I mention that it’s scrum-diddly-umptious too? No?       Sometimes things in the kitchen don’t quite turn out as intended. You start with a seemingly credible recipe, measure your ingredients meticulously, pop the mix in the oven and wait patiently  with your fingers and toes crossed.  Surely it will turn out right after all that. Yet, inexplicably, you draw from the oven an item that barely resembles the image on your recipe. “Oh god, is it even edible?” is the first thought that runs through your head. I like to call situations like this ‘divine intervention’, rather than admit that somewhere along the lines I messed up spectacularly. Take Wednesday for example – I followed a new recipe to the tee (an unusual occurrence), confident that in doing so nothing could possibly go wrong. However that faith meant thatI failed to see the warning signs going off in the background. I frowned at the cupcake batter in my bowl and tried to fathom just how I was going to pour it into the muffin tin when it resembled cookie dough. Despite thinking “Huh, I’ve never made cupcakes like this before” and my gut suggesting something was wrong, I ploughed on, resorting to squishing the mixture into the liners with my hands.
