      Does purchasing spring onions not seem like an awful waste? I mean they do work exceptionally well in salads, quiches, as pizza toppings and, well, anything that you’re feeling too lazy to chop up an ordinary onion for. However, that’s just the white ‘rooty’ part, and not the whole spring onion. So what on earth do you do with the rest – i.e. the majority – of the onion? In my house the dark green fronds often face a grisly execution on arriving home from the supermarket.  They take up so much blasted room in the fridge, weep gunk all over the place and generally disintegrate into a state of oozy floppiness that we usually resort to giving the bunch of spring onions a good ol’ haircut with the kitchen scissors before relocating them to their new home. Fortunately this Fried Tofu Salad with Chilli Peanut Sauces changes things. Because, wait for it….it only uses the dark green part of the spring onion. I’d like to say it was a stroke of genius on my part but it aint. Truth be told I’d already selected the recipe before cottoning on to its clever inclusion of the poor abandoned green parts.       Grilled cheese sandwiches. The ultimate comfort food/cold weather food/can’t be bothered making a ‘proper dinner’ food. Let’s be honest. It’s anytime food. Not just for kids – we ‘grown-ups’ can eat them too. It’s perfectly acceptable grub – even for dinner – especially when jazzed up with nutritious extras. In this particular specimen you’ve got cannellini beans for fibre and protein, avocado for healthy fats as well as a kazillion other wellness-boosting nutrients and beetroot to cover your veg bases. Wait a minute, avocado counts as a veg too! Let’s just forget about the slab of cheese wedged in the middle, and the fact that the bread is lathered in butter. Because, hey a little fat never hurt no-one (given that it’s not the major component of the meal).       Listen up and listen well my friends: this Mushroom and Zucchini Strata must chill overnight. Or at for at least five hours. Why? I’ll get to that later. I simply felt obliged to point this fact out to you now, rather than just before you cheerily go to put it in the oven. Discovering that what you had prepared for tonight’s dinner is now destined for tomorrow night will wipe that happy “I’m all prepared” smile right off your face. Been there, done that. And that is why I’m covering my back by giving you fair warning straight from the start. Two words: plan ahead. Hang on a sec, I can see you’re about to skip to another recipe. I understand – I do that too. Please stay. Planning ahead isn’t a drag (well at least not all the time), it’s actually very useful. Planning prevents situations where you’re frantically searching the net for a quick, tasty recipe to cook. Right. Now.  It’s much nicer to still spend more time than you really should looking for recipes (because if you’re anything like me it’s an addiction), but with no sense of immediacy. And all the chill-time induced waiting will only whet your appetite for this strata even more. It’s lip-smacking good. Shall I explain why you have to wait so darned long for it? Sounds like a plan.       Splurged on sweets/fatty foods over the weekend? In need of a health kick? Something to ‘reset’ your batteries? Look no further than these Millet and Quinoa Balls. There’s not a bad bone in them. These saint-like morsels contain a triple threat of protein with not one but two ancient grains in the form of quinoa and millet, as well as yellow moong dahl (substitute with yellow split peas if necessary). There’s shiitake mushrooms, pumpkin and zucchini to cover your veggie bases, and barely a drop of oil/butter to speak of. Throw in an assortment of therapeutic herbs and spices for good measure, and you’ve got a groovy thing going on. Healthy and exploding with flavour? Oh my. We mustn’t forget the arame. ‘What on earth’s arame?’ you may ask. Good question. Arame is a Japanese sea vegetable (a.k.a seaweed) that is exceptionally high in calcium, iron and iodine, with easily digestible proteins.       A year ago this recipe would definitely have fallen into the category of ‘too weird/scary to try’. Amaranth? Isn’t that some kind of noxious weed? Halloumi? Ummm I think that’s the cheese – it is a cheese, right –  my second cousin is obsessed with. Apparently it squeaks. Huh. Why would a cheese squeak? Surely that’s not normal? Let’s just say my breadth of product knowledge and consequent recipe exploration was quite narrow (and ‘safe’) prior to this year. Laugh all you want about my ignorance regarding halloumi, however I’m pretty sure that I’m not the only soul to whom amaranth was a foreign term, at least in a culinary sense. You know that little grain quinoa that’s been hogging the limelight lately (recipes of which can be found here and here)? Amaranth is like it’s shy and unassuming, but just as talented, cousin.
