      When I was in Melbourne last week I paid a visit to the Queen Vic Markets. It was foodie heaven. My poor friend was forced to wait patiently while I stopped at every single stall and gawped at the produce on display. I’m surprised he didn’t sneak off and find other things to do, rather than be associated with a complete nutter. There was SO much produce, all exceedingly fresh and, well, drool-worthy. If you’ve ever crunched into an apple straight from the tree or stained your lips (and let’s be honest, half your face) red from sitting in the boughs of a mulberry tree and shoving berry after berry in your mouth, you’ll understand my (slightly strange) infatuation with fresh fruit and veg. The asparagus in particular caught my eye. There was none of that awful, woody stuff that goes tough, stringy and bitter when cooked. These were crisp, green new season shoots. I needed to get me some of them, and soon. Obviously I wasn’t going to stash them in my bag and fly them back to Sydney (though the thought did flit through my mind), instead I was able to get my hands on a bunch at the local farmers market the following Sunday.       We’ve recently been inundated with bread (more on that in Wednesday’s waste post) and as a result it’s been an imperative that I devise meals incorporating it in ways other than a conventional ol sarnie. Don’t get me wrong, there’s nothing at fault with a good sandwich, but there are only so many days in a row you can have one for dinner without going a little insane. Last night’s venture involved transforming a few innocent slices of bread into herby, garlicky, crispy croutons. Paired with creamy avocado, cubes of smoked cheese, peppery rocket, sweet, luscious tomatoes, chunks of roasted pumpkin and crunchy pepitas, they evolved into a salad highly suited to a scorching hot evening. I’m all about balancing healthiness (the whole salad thing covers that base pretty well) with indulgence, and the balsamic-maple dressing gave this salad the finishing touch – sweet, tangy and rich, yet not in-your-face over the top.       There is something immensely satisfying about a tarte tatin. Well, if it’s actually successful. It might be due to the fact that as the story goes, it was an unintentional discovery, born from a mistake by the Tatin sisters in Lamotte-Beurvron, France. The knowledge that brilliant things can spawn from seemingly disastrous culinary errors helps keep morale up when things don’t quite turn out as planned. You never know – that mishap from the other night could become next tarte tatin! Or perhaps the satisfaction’s due more so to the process of constructing the tart upside down and the suspense of turning it out. Will it work or will it fall apart in a sticky mess? You stick your tongue out in concentration, brace your legs, count to ten and send a quick prayer to the cooking god. Preparation – and a little sucking up to higher powers – is key.       Okay, I’ve gotta put it out there. This isn’t the best lasagne ever made, well not by my book. I mean it’s damn tasty but not the one and only. Don’t let my sister hear that though. I’d be labelled a traitor. Blasphemous. Insane. You see, this lasagne is her ‘meal to eat before I die’. It’s cheesy, it’s tomatoey and it has four, yes four, layers of pasta. Her kind of heaven. And no matter what I cook, nothing quite lives up to it. It’s become common for me to ask “what did you think of….?” and for her to reply “well, it was alright but not as good as lasagne”. Attempting to create something that surpasses the ‘holy’ lasagne is daft. It just won’t happen. Despite her slender frame, I’m almost positive that my lil sis is a true reincarnation of Garfield.     • Oat Crusted Spinach & Feta Flan

      I’m in desperate need of a picnic, and soon. Why? This, ladies and gents is the food to take with you on car trips, hikes, lazy days at the beach or any ‘transportable-food-required outing’. Or just to eat straight out of the pan before it even has a chance to cool. Are you familiar with that habit? You cut a teensy sliver to taste check (chef’s obligation of course), that then turns into a little bit more and a little bit more until half the thing has disappeared. Self control? Pfft. Moving on to more important (and less embarrassing) matters. Have you ever painstakingly packed a slice of quiche/fritatta only to discover a squishy mess when you arrive at your destination? It’s crushing (no pun intended). Well it’s time to put those trepidations behind you – this oat crusted spinach and feta flan won’t do that. I promise. Continue reading →
