      Does purchasing spring onions not seem like an awful waste? I mean they do work exceptionally well in salads, quiches, as pizza toppings and, well, anything that you’re feeling too lazy to chop up an ordinary onion for. However, that’s just the white ‘rooty’ part, and not the whole spring onion. So what on earth do you do with the rest – i.e. the majority – of the onion? In my house the dark green fronds often face a grisly execution on arriving home from the supermarket.  They take up so much blasted room in the fridge, weep gunk all over the place and generally disintegrate into a state of oozy floppiness that we usually resort to giving the bunch of spring onions a good ol’ haircut with the kitchen scissors before relocating them to their new home. Fortunately this Fried Tofu Salad with Chilli Peanut Sauces changes things. Because, wait for it….it only uses the dark green part of the spring onion. I’d like to say it was a stroke of genius on my part but it aint. Truth be told I’d already selected the recipe before cottoning on to its clever inclusion of the poor abandoned green parts.       As the weather warms up it means one thing. Cockroaches. I bet you thought I was going to say something food related, right? Well, I’ll get to that, but for now we’re going to talk about cockroaches. Foul little critters, they are. Spiders? Meh. Snakes? What’s the big deal? Cockroaches?  I’m cool as a cucumber, of course. Ahem. While my sister has a minor breakdown in the corner over the one hiding in our vanity cupboard, I’m pretending to be all calm and collected. Upholding the image of a responsible older sister, rather than someone who wants to shriek and flap their arms like a little girl (what I actually want to do). I think it’s something to do with their hairy legs and their shell (I have nightmares about crunching down on one in my salad) and their feelers, all twitchy and wavy in the air. And they move fast.       We’ve recently been inundated with bread (more on that in Wednesday’s waste post) and as a result it’s been an imperative that I devise meals incorporating it in ways other than a conventional ol sarnie. Don’t get me wrong, there’s nothing at fault with a good sandwich, but there are only so many days in a row you can have one for dinner without going a little insane. Last night’s venture involved transforming a few innocent slices of bread into herby, garlicky, crispy croutons. Paired with creamy avocado, cubes of smoked cheese, peppery rocket, sweet, luscious tomatoes, chunks of roasted pumpkin and crunchy pepitas, they evolved into a salad highly suited to a scorching hot evening. I’m all about balancing healthiness (the whole salad thing covers that base pretty well) with indulgence, and the balsamic-maple dressing gave this salad the finishing touch – sweet, tangy and rich, yet not in-your-face over the top.     • Cannellini Bean Salad

      Lunches at cooking school are a fickle event. You never know when they will be, or if you will be granted a break at all. One day it may be at 10.30am and the next at 2pm. Some days you may be ravenous by 9am, particularly if there’s a class baking bread next door. The smells wafting through are pure torture, I’m telling you. Other days you may be put off food so much that you never want to eat again, have no appetite whatsoever, despite having eaten nothing since 6.30am. You get the picture. Lunches are up, down and all over the place.  What is predictable, however, is that I will always enjoy eating this cannellini bean salad, regardless of the time of day or my state of hunger. It took me a while to realise that salads can actually be, well, exciting. Crazy, I know. I was a pretty good kid and always ate my veg without much cajoling. However, it was always eaten first – quite unceremoniously – and before all of the ‘yummier’ bits. But its not surprising really as iceberg lettuce, chunks of cucumber, wedges of tomato and carrot sticks aren’t all that interesting – to look at or to eat. In my 10 year old brain that’s all a salad was, and all it ever would be. Continue reading →

    • Mediterranean Green Lentil Salad

      I have a new found obsession with putting green lentils in salad. It started about two weeks ago when I was trying to work out a way to incorporate more substantial amounts protein into main meals, without having to always put it in the ‘central’ dish. Some meals just shouldn’t have legumes/beans/tofu etc. added to them. My sister seems to disagree but honestly could you imagine cubes of tofu stirred through a creamy mushroom fettuccine? Actually, don’t. I just did and it wasn’t pleasant. That’s where lentil salads come into play. Continue reading →
