      We’ve recently been inundated with bread (more on that in Wednesday’s waste post) and as a result it’s been an imperative that I devise meals incorporating it in ways other than a conventional ol sarnie. Don’t get me wrong, there’s nothing at fault with a good sandwich, but there are only so many days in a row you can have one for dinner without going a little insane. Last night’s venture involved transforming a few innocent slices of bread into herby, garlicky, crispy croutons. Paired with creamy avocado, cubes of smoked cheese, peppery rocket, sweet, luscious tomatoes, chunks of roasted pumpkin and crunchy pepitas, they evolved into a salad highly suited to a scorching hot evening. I’m all about balancing healthiness (the whole salad thing covers that base pretty well) with indulgence, and the balsamic-maple dressing gave this salad the finishing touch – sweet, tangy and rich, yet not in-your-face over the top.       A word of warning about this stew. Do not, and I repeat do not, put the pot in the middle of the kitchen table whilst you are having dinner. If you do, you will sit there for hours slowly consuming its contents. This is addictive stuff. I made that mistake the other night and it took a lot of willpower to get up and put the leftovers in the fridge. Even then I couldn’t help sneaking an extra few mouthfuls. In the end I guess it isn’t too serious a crime if you eat more than you really should – it’s healthy to a tee. The kind of dish that makes you ‘glow’ afterwards. Continue reading →

    • Gingered Pumpkin and Red Lentil Soup

      Soup, soup, soup. Perhaps one of the greatest food inventions ever in my book. It removes the chill from one’s bones on cold wintery days and is wondrous at replenishing depleted energy stores. Feeling lethargic? A bowl of piping hot, peppery soup is sure to add a spring to your step. It is relatively difficult to go wrong with soup – chuck in a few vegies, some protein if you wish and a whole heap of veggie stock and leave it bubbling away on the stove whilst you read, blob in front of the telly (or like me do the housework, a far less interesting option). Blended soups perhaps give you even more leeway for ‘slight mishaps’ as everything is pureed to within an inch of it’s life at the end, so it really doesn’t matter if you overcook it/don’t cut everything precisely!       Sometimes all you feel like is a simple dinner. No complex flavours, just good heart-warming food. Something that feels like an indulgence but is actually quite healthy. One that produces left overs – an easy lunch the next day, tasty hot or cold. This roasted butternut squash with spiced chickpeas does all of the above and is super versatile – I have made it in summer and plonked it on a plate with a colourful salad, and in winter it goes beautifully with roasted brussel sprouts and cauliflower.
