      Sorry for the salad spam. Well not really. It’s summer. In Australia. It gets hot. Hot = salad cravings. Big time. However this particular specimen, this Spinach, Pumpkin, Pine Nut, Cannellini Bean Salad with Caramelised Red Onions (whew, that’s a long name!) is suited to all seasons. It can wear the hat (or beanie) of comforting, warm salad just as easily as that of the cool, refreshing one. Think sweet, pungent caramelised onions, chunks of roasted butternut squash (hot or cold), creamy cannellini beans and crisp baby spinach leaves. Toasted pine nuts provide crunch and, well, nuttiness. Whe-hey. Whip this up and you’ve got yourself a fancy schmancy lunch or simple dinner. Pop it in a flatbread/wrap for a snazzy sarnie or serve alongside some quinoa for an extra protein boost. Versatility is our friend. Continue reading →

      Spending New Years Eve/New Years Day battling a raging fever isn’t ideal. Far from desirable. Of all 365 days of the year you go into 2015 simultaneously sweating like a pig and shivering like a kitten caught in the rain. Woop woop! Yet whilst it’s not been particularly pleasant, there’s really nothing to  complain about. Sure I may whine about being unable to ‘properly exercise’ for two days in a row (two whole days). I might fret about the fact that – heaven forbid – I have to remain curled up on the couch in the biggest and baggiest dress I own (hellllooo clammy skin) reading until the worst of the fever passes. Big deal. Count yourself lucky girl. It’ll pass in due course. In any case a little sickness every now and then is a good reminder to value one’s good health. And of course food plays a significant role in ensuring that one stays bright and bouncy. Continue reading →

    • Vegetarian Chilli Con Carne

      It’s been a month since I finished exams, a month since I moved out of college for the summer. You’d think that would be plenty of time to get over the I-never-want-to-do-an-ounce-of-writing-or-study-ever-again funk and start blogging again in earnest. Hmmm not so. It’s taken a sunny day (sunshine always helps, does it not?), packing up a backpack and walking two kilometres to a park with a café (and a smashing selection of fresh juices) to finally get the ball rolling again. The will to cook/bake has been there in force, but the mere thought of sitting in front of a laptop to do anything more than look at other people’s recipes hasn’t been particularly welcoming. But not to worry…we got there in the end! And just to highlight how sparse blog posts have been over the last six months, this is a Chilli Con Carne I made back over the winter break (what seems like eons ago now).       Food at college is pretty decent. Most of the time it’s relatively healthy, or at least a healthier option is provided. Of course one can choose to not eat their vegetables, to avoid the fruit bowl and to have second helpings of dessert every night. But one need not – it’s good practice in self restraint. Diligence. As with all college’s there’s been the occasional ‘huh’ meal, such as chicken meatloaf aka. chicken mince baked into a pale, lifeless slab. Mmm yummy. Unless you start to go all ‘foodie’ and ‘snobby’, most takes on the classics are perfectly fine. Despite striving to adopt a ‘food is food’ mindset, from time to time one cannot help weep over how easy it is for a dish to fail dismally, simply due to particular techniques or ingredients. On one such night we were presented with the option of sweet and sour pork or sweet and sour tofu. Now, the meal was adequate, in no way inedible. Yet it was blow-your-socks-off sweet and lacked any satisfying crunch from vegetables. This was one such time when the food snobbery rears it’s head and you can’t help but compare it to your own ‘better’ recipe. Continue reading →

      If cooking could be a person, it’d be your best mate. Not a partner – that’d just be too creepy. But a real keeper all the same. It’s there for you through thick and thin. To witness the good, the bad, the plain weird, and everything in between. The crazy dancing around the kitchen to Bruce Springsteen’s ‘Dancing in the Dark’ moments. The bleary eyed pajama-clad pancake sessions (where you don’t even attempt to flip the pancake as your coordination most definitely hasn’t woken up yet). The oven-died-just-as-the-cheesecake-needed-to-go-in tantrums (foot stomping included). The heartbroken pizza-dough kneading, tears silently running down one’s face. The fist pumping when your Charlotte Russe turns out of the mould. Perfectly. The trying to juggle too many things at once moments, such as making lasagne while clad in bright green running shorts and a hot pink sports bra, with a floral apron thrown over the top (so you can exercise while it’s cooking, of course!). Let’s just say that opening the door to receive a parcel resulted in one very confused mailman. Let’s not talk about that. Like it or not, cooking’s seen the very best and worst of you.
