      This Apple Sultana Loaf was not intended to embody the Taste Without Waste philosophy in a literal sense. Oh no. It had rather been assigned to the other major position of relatively-healthy-but-still-super-tasty recipe. After an unexpected turn of events it’s now also taken on the role of recipe-that-can-use-up-ingredients-that-really-shouldn’t-be-used. Taste Without Waste on two fronts…we’re doing well today aren’t we? How did we happen upon this double whammy? For the past week I’ve been staying at a family friends house and one afternoon decided to bake this loaf. After rummaging through their dried fruit stores I could not see no hide nor hair of sultanas. There was however two packets of mixed dried fruit. Why, I could just pick the sultanas out! Problem solved. Better than making a trip down to the supermarket and back, right? Hmmm. After opening the first packet (which had already been opened at some point) I wasn’t so sure. The stuff was practically fossilised. Dry and crystallized to say the least. The best before date? November 2010. Continue reading →

      First recipe post for 2013 2014! We’ll get there with the date change. It usually clicks in around March. Anywho, how are those goals (we’re not calling them resolutions, remember) going? Wavering on any yet? I surely hope not. Just when you thought you were done with all that New Year philosophical rah-rah, here’s a few more lifestyle changes to consider. With the help of these Apple Pecan Cinnamon Rolls of course. If you’ve already got the following ‘ideals’ down pat, good for you. We’ll let you keep that smug grin. For the moment, anyway. Give it a few hours and it’ll be replaced with one of blissed out happiness. Light and fluffy with a sweet, nutty filling. Drizzled with an oozy, sticky maple topping. Don’t say I didn’t warn you about the side effects.       Vegan Carrot Walnut Cookies

      My last foray into baking vegan cookies was met by the comment “they taste vegan”. Well, duh. Yet the inflection suggested that by making them vegan, I was committing a crime against cookies. According to this ‘higher power’ vegan is the witchiepoo of the baking realm. It was clear that any future sorties with vegan baking would be met with significant apprehension and – most probably – displeasure.  That’s a pretty negative and narrow perspective don’t you think? I must admit the cookies in question were quite horrid – I only ate them in a stubborn attempt to pretend that my cooking surely couldn’t produce anything that bad. I should have swallowed my pride and saved my taste buds from some unnecessary torture. Despite that first abortive attempt at vegan baking, I remained unperturbed. Just because one recipe was a shocker, didn’t mean that they all would be. Right? And they couldn’t be any more horrid than cookies that tasted like concrete. Well, I sincerely hoped not.     • Deconstructed Apple Pie

      It’s a Saturday night and I’m standing in the kitchen staring at two pitiful Fugi apples and some short pastry off cuts. You would think I had more exciting things to do, but no. Most of the time this is as thrilling as it gets. Regardless, I was determined to do something productive with my evening.

      I had made mini quiches for lunch earlier in the day, resulting in the left over pastry. Usually I will roll the leftovers together and make a few more quiches which always end up a bit chewier due to the pastry shrinking  (you should let the pastry rest for 30 minutes after re-rolling but I always get too impatient. On this occasion I had run out of egg mix so more quiches were out of the question – I was too lazy to make more egg mix –  but didn’t want to just throw the pastry out.  Consequently it was shoved in the fridge labelled “deal with later”.     • Baked Apples

      Would you believe I had never eaten a baked apple until a few weeks ago? Well perhaps you would – after all we don’t know each other that well yet. Hopefully that will change in due course! Anyway, I was shocked to realise that I hadn’t. Come peak apple season our kitchen is brimming with apples waiting to be incorporated into scrumptious dishes. Apple crumble is a don’t-mess-with-me tradition in our family and I cannot remember a year that we haven’t made at least half a dozen batches of stewed apples. The look of pure horror on a friend’s face when she discovered me stewing apples a number of years ago was priceless. Apparently normal fifteen year olds don’t do that sort of thing, or at least not for kicks. Continue reading →
