      Why is it that birthdays are always the event that causes one to stop and take stock of life? To put one in a contemplative mood, a reflective headspace. Today I reached the big two-oh mark. Two decades. If that’s not damn scary then I don’t know what is. Maybe you don’t freak out on birthdays. You simply acknowledge them and go on your merry way. Some people, however, aren’t quite so calm and collected – you’re looking at the girl who had a breakdown the day she turned sixteen after listening to Taylor Swift’s ‘Fifteen’ and realising she would never be fifteen again. Gosh, that’s not one, but two confessions I’d like to retract…birthdays also tend to prompt some people (I wonder who that could be?) to become brutally honest. But before such musings spill out in what is likely to be a serious case of word vomit, we need to acknowledge something important. That cannot be ignored. What’s that? Birthday’s need cake. And if not cake, then cupcakes. You see, it aint a birthday if there’s not some sort of sweet indulgence to be had. Unless you’re one of those people – choosing savoury over sweet? Humph.       It’s university exam number one tomorrow. That means at this point in time zilch brain power remains. Coherent sentences…what are they again? I was trawling through my rapidly dwindling ‘back up collection’ and came across this from mid-last year. Clearly it had been left, abandoned, in the depths of the folder due to a) the terrible photos and b) the slightly mortifying writing skills. Now, I began to touch up both and then stopped. Isn’t there something quite grounding about acknowledging that you’ve produced a work/done something that wasn’t quite perfect? And about leaving it that way. Not beating yourself up about it. To remember that life’s about balance, not perfection. To have a laugh about it if you can (and hope to god things have improved somewhat since then) and move on.       Uni classes have officially finished for the semester, with this week dedicated to study prior to exams commencing. It’s a little over half way through day one of revision, revision and yet more revision and I’m already dreaming of all the baking I could be doing in another life. The kind of baking that requires little thinking. Minimal brain power. The kind that involves face-planting into said baked good and giving zilch consideration to other matters going on in the world. Baking is satisfying and straightforward. It’s productive. You’re guaranteed to get a pretty darn good end result (should we tack on a ‘most of the time here’?). You can see (and sneakily taste) the progress. Quite unlike some other aspects of life…I wonder what they could be? Revision-time requires the simple things in life. For when your brain resembles scrambled eggs, a muddle of words and numbers. It requires homely things. And yup you guessed it, this is a homely cake. It’s neither fancy nor fussy to prepare.       What are you doing this mother’s day? Are you a cynic who slanders the mere thought of yet another commercialised holiday? Soppy cards, posh lunch deals, spa breaks, the lot. Do you quietly moan, yet celebrate it anyway in a more subtle manner? A bunch of fresh flowers or breakfast in bed. Or, do you wholeheartedly embrace the opportunity to celebrate? Flowers, cards, breakfast, lunch and a spa break to boot. I’m always torn when it comes to such events. Is it rude to ignore them? It is it an overt display of consumerism to embrace them? In the end I usually decide that ‘celebration’ is justified a) if the card is homemade (and by you, not from that funky store down the road) and b) if it involves good food (again, homemade is preferable).       Ahem, this post may or may not have been penned as a ‘back-up’ over the summer. But hey, there are times when that preparation becomes handy dandy. It’s inevitable. Times like now. Fresher or ‘O week’ of University is in full swing and spare minutes, let alone an hour, have been rare. Things’ll go back to normal around here eventually…in the meantime here’s some cake. Cake is good. Right?

      Light, luscious lemon squares. Nothing like getting some good alliteration going. Hey, some people liked English at school. Nothing to be ashamed of. Well, not much. There’s also nothing quite like the perfect mouthful of summer. Sweet as a pea with a refreshing lemony twist, these dainty pale yellow sponge squares are reminiscent of an English garden tea party. Of course if you’re trying to please the more macho personality, simply hack it into big slabs and slather with a double quantity of icing. Nothing elegant about that.
